This is a great idea. My problem has always been: too high, then too low, then too high, then freezing up before I can coat the insides. What a nightmare. This seems doable. I love the creamy, runny nature of when you pulled spoonfuls up and let it drop into the bowl. Perfect.
Note: You pronounced Ghiradelli perfectly. I live only about 3 miles from the factory.... Go there a lot. BUT.... I prefer the Guittard chocolate chips. They are better quality and don't have that chemical/artificial taste that the Ghiradelli often has.
I also love the Guittard chips. I male my microwave fudge with those.
Oh my gosh how I wish I had known about this last year..my daughter was doing some sort of coffee beans for her boss and did we ever have a mess and the choc was not so grand either. I dont know where her recipe came from for the coffee beans but I told her never again lol
Will definitely be getting this. Have you tried using 1C of the wafers & 3 of the chips for better flavor? Or does that not give a good consistency?

I have only heard Ghirardelli pronounced like you said it (gear-uh-deli). I would not be surprised if the founders pronounced their name differently, but, that was long ago, I think.
When I say Ghirardelli, I pronounce it, " Ghirardelli". Although sometimes I'll pronounce it "Ghirardelli" if Im feeling fancy.

Here in the San Francisco area, we also pronounce it Gear-a-delli.. So not mispronounced at all.

Melting wafers? Never heard of them. Maybe that's my problem! All these years I've been melting chocolate chips over a double broiler and it always ends up drying out and getting too thick. 😂
