It's because he thinks the cement board should overlap the flange, but it should not. The cement board should sit slightly above the flange. I think he actually made a different video where he illustrated this method and showed how you use fiber cement tape to overlap the expansion gap at the flange.
Wel cement board crumbles like all hell and it has to carry a ton of weight with mortor and tile. It’s an extra layer of assurance for good adhesion but almost No one does that so, not sure of it’s necessary. That being said, fuck cement board. Use GoBoard.

Durock panels are $12 bucks each, you need about 7 for a standard shower with a gallon of red guard, aquadefense, will cost less than 200 bucks, vs the new panels costing $600 and up just for backer boards.

I was referring to the standard durock panels for 12 bucks, not the 15 - 20 dollar ones, those don't need waterproofing like the standard ones do, but I have to agree, GoBoards from JM for the win. I also started painting the shower pan over a pre slope, instead of installing the 40 mill oatey liner, I'm using laticrete hydroban waterproofing, it's been a game changer, you spend a little more money, it's about 100 per gallon, but you don't have to deal with the corner folds from the thick liner giving issues to get a nice hidden fold.
Never use foam base. Walls are ok I guess, I really don't care for it. Foam base always fails after a year from standing in same spot to shower. The repeated use dents the foam under the tile and will need to be repaired with proper mud bed.
Vapor barrier? This type of backer boards get painted with redgard, aquadefense, laticrete hydroban, etc... giving you a vapor barrier and a waterproofed surface to install your tile, you sure he's the rookie?
Good adhesive and liquid nails don't belong in the same conversation. PLX3 is a good adhesive.
You need a moister barrier if your not using Kerde . Please use proper fasteners . No narrow pieces at the bottom .

Not really needed because they have mold resistant cement board and adding drywall would push the wall out an extra 1/2-3/4 depending on the thickness

A 3x5 Johnmanville board is 28 dollars. Durock is 15 to 20 I would pay the premium to save my back and shoulders.
