Chicken & Stuffing Casserole Recipe ~ Quick Dinner Idea!

Chicken & Stuffing Casserole
1 pound cooked chicken
salt (to taste)
pepper (to taste)
1 tsp celery seed
1 tsp thyme
1 10.5 ounce can cream of celery soup (You could also use cream of chicken or cream of mushroom)
1/4 cup milk
2 TBS onion (diced)
1 cup carrots & peas
6 ounce package of stove top stuffing mix
1 stick butter (melted)
1 cup chicken broth
I used a 10" x 10" baking dish.
Bake in a preheated 375 degree oven for 30-40 minutes until browned on top and bubbly!

I always find what I like and just wing it.
Very good recipe. Rather similar to my chicken pot pie recipe. Just leave out the stuffing and line the bake dish with pie crust and cover the mixture with the crust as well.

I was alone for years and I love to cook. I would end up throwing so much away! I have a couple that moved in next door. She has MS and can’t really stand to cook much anymore! I make great meals and eat with them often. I whip up great desserts and they are always so grateful! Now I cook and bake to my hearts content and we enjoy each other’s company so much! I’m so grateful and blessed to call them my friends and so blessed that we can share our meals together! I’m so happy!

You are a dear soul to care for your neighbors. I can attest that I am 100% positive they love your company, your meals and your caring nature. I say this because I have MS and while it isn’t impossible to cook, it is very painful, my body hurts as I move about the kitchen. I feel I am blessed because my grown son takes care of me. Every morning he says “how’s my wonderful mom?”. I tell you, I could cry from happiness. You are a blessing in this world. 🕊️🕯️

Yes, I agree! It drives me crazy when the recipe calls for 1/2 cup of something, and they leave a TBSP of the ingredient in the measuring container. This recipe was the first video I've watched of yours, Melanie. That chicken casserole looks so delicious, comforting and easy, thank you!

Suggestion. Melanie put her pound of chicken and seasonings into the 8x8 pan. She then put the cream of celery soup, liquids and veggies into a big bowl and mixed them and then poured that into the 8x8 and had to very carefully mix them together. It would be so much easier to do the soup / veggie mixture in the big bowl and then add the chicken and seasonings to that bowl. Much easier to mix. Then pour the entire thing into the 8x8. Final steps - top with stuffing and bake. It does look delicious and I will be trying it.

I see a lot of tutorials where they are mixing in the casserole dish instead of a big mixing bowl - I’m a sloppy mixer 😂. I need the big bowl 🥣

This is where a rotisserie chicken from the store would come in handy and help make a quick supper! Maybe it's just me, but I'd rather leave the dressing layer in little "hills and valleys" on top instead of making it so flat and smooth. I like some little hills to get extra crispy!

A certain hospital cafeteria offered lots of home recipe food. My favorite was a lot like your recipe but with broccoli. I remember a taste of mayonnaise in it too. My mouth is watering. I wish I had asked for that recipe. 😞

I live alone, and I've done so for years. That means I've cooked for myself, too.
Come Thanksgiving, cooking a traditional big turkey is too much for just me. So I came up with something similar to what she has here. I call it Turkey Stuff...
TURKEY STUFF
1 pound cut up, thick-sliced turkey (like from a deli, but but chopped into bite-sized pieces)
1 cup frozen mixed vegetables
1/2 cup frozen pearl onions
1 can cream of chicken soup
1/2 soup can of milk
Seasonings to taste (salt, pepper, rosemary, sage, thyme, parsley, garlic powder)
1 box Stove Top turkey dressing, prepared
Thaw frozen veggies.
In a large bowl, combine everything except the dressing; mix well.
Pour it into a greased 8x8 (or 9x9) casserole dish, spreading it out.
Cover it with the prepared dressing.
Bake at 400F for 30 to 40 minutes. Serve smothered with turkey gravy.
It's basically a turkey pot pie, and a lot easier than cooking a huge turkey, especially when cooking for one. And you still get the leftovers.

Made this for supper tonite, so good. Will be making it again. Two things I did different was I added celery and I put the chicken on the bottom and didn't mix it. Turned out delicious.

I can't imagine "real" fire/paramedics would eat this. Use real bread cubes and make the cranberry sauce/relish from fresh.

I make this all the time. We absolutely love it! I mix onion soup mix with the chicken soup. Sometimes I put mashed potatoes on the bottom and sometimes gravy instead of soup. This week I added cream cheese to the soup mix and it was really good. Use your imagination...

Yes, much better flavor if they are sauteed. We're not big on celery though! A lot of people have suggested mushrooms but that's a definite NO from me! YUCK! LOL

I agree with gram1348. This looks delicious. I'll be trying this too! I find Stovetop Stuffing to have a too distinct flavor. I use an off brand stuffing mix and like it better...but as Melanie said it's all up to individual taste. Thanks guys!

I made this for my husband last night and he liked it and it was easy for him to eat. Due to the pain he has in his mouth I used a good quality canned chicken that’s already mechanically soft.
We used celery and not the celery seed. Will be making again.

Packaged dressing so salty. Also....I am pleased I can get the chicken grom the rotisserie chicken sold by weight at my store. Great for a ton of recipes.

Just a real quick note......for those of use who cannot eat MSG, the Turkey Stove Top stuffing does not contain it. The chicken does!! Really wish MSG was not in so many things because it is a real problem for many people.

This is an excellent recipe for those of us who live alone. Her casserole dish is made by corning ware. I still have a set of them and I treasure them. They can be found occasionally on eBay. I have read the comments and I will agree with one of the other readers that mixing everything in a large bowl first makes it much easier. I am wondering if those carrot coins were cooked first. I am thinking a small can of the really small peas or maybe frozen. But I think the carrot would really need to be pre-cooked. Those who like white meat chicken could use a chicken breast, and my choice would be a chicken thigh. Both of those precooked. Leftover meat from a rotisserie chicken would work great. Jacques Pepin once said that his wife really liked Pepperidge farm bagged stuffing mix. And there you are!
I love my Corning Ware dishes! Most of the ones I have were my mother's. Every now and then I can find some at yard sales. The carrots and peas were not pre-cooked, but they were frozen. I usually make this when we have a rotisserie chicken and use the leftovers. I have seen quite a few people comment about the Pepperidge Farm bagged stuffing mix. I need to try it! I've made this the exact same way except I flatten out chicken breast halves and place the mixture on them, then roll them up jelly-roll-style. Any mixture left goes on top, then Bake. Love it and have been making it since to early 1970s.

I always make my own cornbread. Never use Stove Top then will mix other ingredients. So much better than Stove Top.

@@melaniescountrycooking I have a love/hate with peas. I went through a period where I was in love with peas. I am back in my disgusted with peas period. They are in a lot of pot pies and casseroles and some pasta dishes so I am fine with them there, though I would not choose for them to be there, I guess. They are a bit sugary, so I try to avoid them a wee bit in large quantities if I can. Not to say carrots are not. But I cannot stay away from carrots and celery. LOL Thanks again! Love your channel.

I grew up with always having sage in chicken dressing. I think it is as important as celery and onion.

We make this and call it chicken stuffing bake! We cut up several chicken breasts into cubes, make the stove top stuffing, and take creamy chicken soup and combine it all in a glass baking pan and cook it for 20 minutes. Serve with green beans on the side.

I make my own dressing with bread cubes, onions and celery. Stove top is too salty and with the salty soup, it’s too much sodium.

Bravo, being single I will make this for myself for Thanksgiving, only I'll make sweet potatoes in the crock pot, (just wash them and toss them in-nothing needed-cook high for 4 hours) they come out SO sweet!!!! THANKS AGAIN!!!!!!!
