Chicken & Stuffing Casserole
1 pound cooked chicken
salt (to taste)
pepper (to taste)
1 tsp celery seed
1 tsp thyme
1 10.5 ounce can cream of celery soup (You could also use cream of chicken or cream of mushroom)
1/4 cup milk
2 TBS onion (diced)
1 cup carrots & peas
6 ounce package of stove top stuffing mix
1 stick butter (melted)
1 cup chicken broth
I used a 10" x 10" baking dish.
Bake in a preheated 375 degree oven for 30-40 minutes until browned on top and bubbly!
Enjoy!
Suggestion. Melanie put her pound of chicken and seasonings into the 8x8 pan. She then put the cream of celery soup, liquids and veggies into a big bowl and mixed them and then poured that into the 8x8 and had to very carefully mix them together. It would be so much easier to do the soup / veggie mixture in the big bowl and then add the chicken and seasonings to that bowl. Much easier to mix. Then pour the entire thing into the 8x8. Final steps - top with stuffing and bake. It does look delicious and I will be trying it.
Great idea Merrie! Thanks for commenting and watching!
I see a lot of tutorials where they are mixing in the casserole dish instead of a big mixing bowl - I’m a sloppy mixer 😂. I need the big bowl 🥣
@@lindalou5213 LOL Linda! I'm in the sloppy mixer club too!
YT busybody.
Looks delicious!
Finally someone who scrapes the cans and bowls. 😄
Good to the last drop! LOL Thanks for commenting & watching shamolnar!
Finally someone who scrapes the bowl to get all the soup out…. :). I will be making this…it looks so good
Good to the last drop! LOL I hope you love it gram! Thank you for commenting and watching!
AMEN...😊
Amen !!
Yes, I agree! It drives me crazy when the recipe calls for 1/2 cup of something, and they leave a TBSP of the ingredient in the measuring container. This recipe was the first video I've watched of yours, Melanie. That chicken casserole looks so delicious, comforting and easy, thank you!
@@NanaPapa123 You're welcome! It is so easy to make! Thanks for your kind comment and for watching! We appreciate it!
I live alone, and I've done so for years. That means I've cooked for myself, too.
Come Thanksgiving, cooking a traditional big turkey is too much for just me. So I came up with something similar to what she has here. I call it Turkey Stuff...
TURKEY STUFF
1 pound cut up, thick-sliced turkey (like from a deli, but but chopped into bite-sized pieces)
1 cup frozen mixed vegetables
1/2 cup frozen pearl onions
1 can cream of chicken soup
1/2 soup can of milk
Seasonings to taste (salt, pepper, rosemary, sage, thyme, parsley, garlic powder)
1 box Stove Top turkey dressing, prepared
Thaw frozen veggies.
In a large bowl, combine everything except the dressing; mix well.
Pour it into a greased 8x8 (or 9x9) casserole dish, spreading it out.
Cover it with the prepared dressing.
Bake at 400F for 30 to 40 minutes. Serve smothered with turkey gravy.
It's basically a turkey pot pie, and a lot easier than cooking a huge turkey, especially when cooking for one. And you still get the leftovers.
Sounds great Jim! Thank you for sharing!
Thanks for sharing your dressing recipe . So easy to make and delicious sounding . Have A Blessed Day ❤️.
As a single woman it's difficult to find recipes for one person without a ton of leftovers! Will be trying this! Thank you! 😊
You're welcome! Hope you enjoy! Thanks for commenting and watching!
I always find what I like and just wing it.
Very good recipe. Rather similar to my chicken pot pie recipe. Just leave out the stuffing and line the bake dish with pie crust and cover the mixture with the crust as well.

A certain hospital cafeteria offered lots of home recipe food. My favorite was a lot like your recipe but with broccoli. I remember a taste of mayonnaise in it too. My mouth is watering. I wish I had asked for that recipe. 😞
@@maramakesjournals2319 Yes, you could definitely use broccoli! I have seen some recipes that have sour cream in them....maybe that's what you were tasting?
@@melaniescountrycooking Maybe. I’ll experiment. 😊
Found this recipe on the back of a stuffing box years ago. Have made it many times since with turkey, always after Thanksgiving. 👍🏻

I agree with gram1348. This looks delicious. I'll be trying this too! I find Stovetop Stuffing to have a too distinct flavor. I use an off brand stuffing mix and like it better...but as Melanie said it's all up to individual taste. Thanks guys!
I hope you love it Brian! I used to use Bell's stuffing mix if I didn't make my own, but it seems the taste of that changed so I switched to Stovetop. Maybe I'll try some off the off brand stuffing! Thank you for commenting and watching!

You must have purchased your dishes and casseroles about the same time that I purchased mine, in the early 1980s 😊 The Flatzengraff plates and Corningware casserole dish bring back so many happy memories for me!
Glad they brought back happy memories for you Jeannine! They are pretty old...I often think of replacing them, but they have happy memories for me too! Thanks for commenting & watching!
I also have these, even the white au gratin dish:...with the jelly.😁
This looks delicious. The only change I'm going to make is I'm going to use Pepperidge Farm original stuffing. Thank you so much.
You're welcome Marianne! Any kind of stuffing works! I hope you love it! Thanks for commenting & watching!
Had some leftover country style ribs and rice I reworked using your recipe. Made gravy instead of soup. Mixed the shredded ribs with green beans and the gravy then topped with the dressing (mixed my leftover rice with the dressing). Since there are veggies in it, I'm serving as is with homemade yeast rolls. Ty so much for the idea!!!

I made this for my husband last night and he liked it and it was easy for him to eat. Due to the pain he has in his mouth I used a good quality canned chicken that’s already mechanically soft.
We used celery and not the celery seed. Will be making again.

Great recipe. Can also use ground chicken or turkey. Leftover rotisserie chicken recipes are great.
Absolutely! Thanks for commenting and watching Liz!
This is an excellent recipe for those of us who live alone. Her casserole dish is made by corning ware. I still have a set of them and I treasure them. They can be found occasionally on eBay. I have read the comments and I will agree with one of the other readers that mixing everything in a large bowl first makes it much easier. I am wondering if those carrot coins were cooked first. I am thinking a small can of the really small peas or maybe frozen. But I think the carrot would really need to be pre-cooked. Those who like white meat chicken could use a chicken breast, and my choice would be a chicken thigh. Both of those precooked. Leftover meat from a rotisserie chicken would work great. Jacques Pepin once said that his wife really liked Pepperidge farm bagged stuffing mix. And there you are!
I love my Corning Ware dishes! Most of the ones I have were my mother's. Every now and then I can find some at yard sales. The carrots and peas were not pre-cooked, but they were frozen. I usually make this when we have a rotisserie chicken and use the leftovers. I have seen quite a few people comment about the Pepperidge Farm bagged stuffing mix. I need to try it! Thanks so much for commenting & watching!
