I was running 21mm internal width on my rims with a 2.35 front and 2.2 rear. Not ideal, but functional. So I would say 28mm internal width is fine. Others would argue for much wider, but if that's what you're used to and what you have, go for it.
We used a Tarptent ProTrail and just strapped it to the top of one of the handlebar bags. It was tight for two people (I think we'd bring a bigger tent or each bring our own if we were to do it again). Best of luck out there!
I used a Marmot Hydrogen 30-degree bag. Packs down really small, is very light, and kept me very warm. I usually wore long sleeves with it and occasionally my down jacket as well if we were at higher elevations. Other gear items I referenced but didn't talk about are listed in the video description. Would the optimal rims be something like 28mm internal wide? To be able to fit 2.3 or 2.4 if needed and still be able to ride 2.25 just fine?
