go to start menu search for computer management Go to disk management Check if there the VHDX - virtual harddrives - are still attached to your computer, sometimes it can be in offline mode detach the VHDX files by right click on it and select detach
just go with the flow don't expect that all hyper-v hardware configuration to be without an error the only thing you should edit is your hardware graphic card it will go in to recovery in the end if you want a better EFI just recreate opencore after first install.
I lowered the RAM used to 4GB (not working) then 2GB and it finally started but then it got stuck on the boot screen. I'll tell you if I find anything that helps.

@@Somari poweroff your vm; then go to Settings > SCSI Controller > select UEFI.vhdx then Edit > Expand the disk

YOU sir are the man. The performance is light and day different than on VMware Workstation.
It did work. I had to turn off the VM a couple times to complete the installation.

A boot image was not found
You forgot to disable safe boot as the vid describes

MacOS installed and updated to Sonoma, but XCode failed to install platforms and so did not work.
Installation requires a DHCP server on your network. Without DHCP the bootloader freezes on the first screen
