I’m sharing with you a recipe for an amazing almond pie with juicy cherries.
The composition of the dough includes almond flour, which makes the cake more crumbly, tender, slightly moist and literally melts in your mouth. We need:
Almond cake with cherries
Butter 82% - 200g
Sugar - 120g
Vanilla sugar - 8g
Egg - 4pcs
Wheat flour - 100g
Baking Powder - 6g
Salt - 1 pinch
Almond flour - 200g
Filling:
Cherries - 400g
Topping:
Brown sugar - 40g
Cinnamon (ground) - ½ tsp
Almond flakes - 50g
Wash the cherries and remove the pits.
In a bowl, combine butter (room temperature) with sugar and vanilla sugar, beat with a mixer until a light mass forms. Continuing to beat, add one egg at a time (room temperature). Add baking powder and salt to flour, sift into butter mixture. Add almond flour and mix thoroughly until smooth.
Put the resulting dough into a mold covered with parchment paper (size 20x20 cm) and level it.
Put the prepared cherries on top of the dough, pressing it lightly.
Combine brown sugar and cinnamon, stir. Sprinkle the cake with prepared sugar and almond flakes.
Send to the oven preheated to 180C, bake for about 40 minutes.
Check the readiness of the cake with a wooden skewer, it should come out completely dry.
