What is wasabi and where does it grow?

  • Wasabi is generally thought of as a pungent green paste that accompanies sushi. That green paste is more often than not made up of grated horseradish. In this video, we take a look at the plant whose grated root makes up the real wasabi. Joe Hollis, founder of Mountain Gardens, explains what wasabi is and where it prefers to grow.

    How exciting for me because I was given free wasabi seeds. Had no idea about their habitat. You put together a really nice chunk of information that surprised me. I just so happen to have a spring right next to my house. I get all my water for my home from it.
    I’m planting wasabi! Thank you!
    Postscript.... today is 5/3 and my seeds are breaking the dirt.

    Great set of videos. Thanks for making them and enjoyed Mr. Hollis's delivery and demeanor. What variety of plant is being grown? Wasabi japonica, Eutrema japonica? Is there anyone growing toothwart or Cardamine diphylla as a native substitute for wasabi?

    The perilla thing is partially a myth. Shiso wasn't really consumed medicinally but rather for its flavor profile. As for the coloring, red shiso was used primarily for food coloring or dyes. Now going towards pickled ginger, Gari isn't normally dyed red, seasonal harvests of young ginger will naturally turn pink when exposed to acetic acid, a similar reaction gives the budding growth off the roots a similar vibrant pink color. It was only dyed with shiso if it was made using out of season ginger (Typical brown skinned grocery store ginger), which does not change color when pickled. In the case of Beni shoga, it does not get its color from either acetic acid or red shiso at all, it comes from plums.

    I bought wasabi seeds on eBay I grew them and they are muster seeds :( i am going to find real seeds. would you sell some of you seeds to me :) thanks for the videos and information.

      Finding seeds will be somewhat on the difficult side. Most varieties of wasabi are not available in the US due to supply. Try looking for plantlets instead of seeds.
