    If a pard was cooking some meat and you got some of the grease to put in the batter that would add some more flavor.

    put some fat from the salt pork in the boiling water to get the grease from it it helps the corn meal stick together.

    Good video, I've also seen a method where they cook the cakes on the head of a shovel over the fire.

      They were called hoecakes because they were cooked on the straightened head of a garden hoe, modified for use in a hearth/fireplace.

    If you can soak the board in water before cooking, it will not catch on fire.

      Absolutely. However, that isn’t in the period instructions AND the army was usually challenged in how much water they had and vessels to soak it in. Given that, I can’t see soldiers often following your sage advice.

    If you still have a bit of bacon grease left in your canteen half pan I've fryed them...dont have them to thick though

    I notice that a lot of these videos reference Michigan. Are you guys a Michigan based unit and if so, which one?

      We are both from Michigan. Home units are the 5th Michigan group and Sally Port Mess.

      Hey thanks. I'm a recovering F&I War re-enactor looking for a Michigan CW unit. Problem is, I live in the tip of the mit and cannot find a unit this far north. Any suggestions?

      Or use a couple nails to do the same.
