Interesting note about N.B. Latin was apparently common enough that "Bene" meaning "Good" was street slang at the time. It shows up in slang dictionaries from the 17th to the middle of the 19th century, along with derivatives - "A bene cove" was a "good fellow," for example.
As a suggestion, you should do an episode on slang centered on Francis Grose's "A Dictionary of the Vulgar Tongue" from 1785. There are some awesome terms in there.

Actually I worked in kitchens a long time, my family is full of chefs/cooks. That cut of meat and chuck eye steak are some of my favorites. You want good flavor in meat, get it next to the bone. Bonus feature, stewing that cut wil make excellent broth; becuase of the morrow.

You dont cook legumes (such as peas) in salty water because they dont soften up. I guess thats why they still had ´structure´ after three hours.
You also dont boil potaoes in acidic water for the same reason. (A mistake I once made when cooking Polish cucumber soup, with pickled cucumbers)

Who ever was sent to fetch water (or chop wood” would have also ben told to find a number of rocks to rest the pot upon… and perhaps to make a proper fire ring…. After all if you have the time to let one person cook a meal for six soldiers then you are not just stopping over night while on the march but are digging in or already dug in. In that case a keyhole fire is what is need…. A smaller area for your pot to go on a tripod of rocks, and larger area to keep burning wood down to coals to keep raked around those rocks

I'm guessing a gridiron would've made the "slow fire" a little easier to attain. I'm not sure if they would've had one all time though. Great video. I'm going to try this recipe and use half the turnips and add carrots in their stead. I'll just pretend that I got those from the ole farmer's field as well. I love this time period. I would've been just fine with a small parcel of land, a Brown Bess, a smoke house and an open hearth cabin. God bless you all.

Glad you enjoyed! Regulating a fire with a pot just on it is certainly a lot of work!

@@RevolutionaryGazette I can only imagine. I tried my hand at ash cakes and hoe cakes with camp fires. Takes a lot of patience.

You need to get some rocks to set the pot on top of... or get some kind of contraption to hang the pot over the fire.
