You upload your videos when is best for you. I usually come home from work at 5.30pm. By the time I do dinner and sort out kids I don't sit down and watch until about 7.30 - 8pm. I don’t think the upload time matters too much as long as it is as consistent as circumstances allow realising that you often may have no control over upload speeds etc. Unless of course you felt you wanted to take a weekly day off or suchlike which would be understandable. It feels like you are in a good niche at the moment with travelling around the four countries of the UK which have much to offer and your research is appreciated.
