Khoresht Gheymeh (Gheimeh) - Split Yellow Pea Stew

  • Ingredients:
    1 cup split yellow peas
    1 dried lime
    1 lb (453g) ground beef
    Vegetable oil
    Cinnamon
    2 onions
    Salt, turmeric, ground chili pepper
    Persian spice mix (Advieh)
    2 tbsp tomato paste
    1 small potato
    1/4 tsp saffron
    Preparations:
    1- Grate one of the onions.
    2- Soak the saffron in boiling water for 30 minutes.
    3- Soak the dried lime in boiling water for 20 minutes.
    4- Dice the other onion.
    5- Slice the potato.
    Directions:
    1- Soak the split yellow peas in water.
    2- Combine the grated onion and ground beef in a large bowl.
    3- Add salt, black pepper, and Persian spice mix (Advieh) to taste, and mix thoroughly.
    4- Form the beef mixture into small meatballs.
    5- In a small pot, fry the diced onions in vegetable oil until translucent.
    6- Add turmeric, ground chili pepper, Persian spice mix (Advieh), and tomato paste, then stir.
    7- Add the meatballs to the pot and fry them along with the onions.
    8- Add the split yellow peas to the pot, stir, and pour in boiling water until the mixture is covered.
    9- Add a cinnamon (or two).
    10- Make holes in the dried lime and add it to the pot.
    11- Add the saffron and its soaking liquid to the pot.
    12- Stir, cover, and simmer for 15 minutes.
    13- Serve with fried potato slices on top.
