Salmon Tacos w/ Sauce
Ingredients
For the Salmon:
1 lb wild salmon fillets
1 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 tbsp olive oil
1 tsp onion flakes
1/8 tsp chili powder
1 tsp paprika
1/4 tsp garlic powder
For the Fish Taco Sauce:
1/3 cup mayonnaise
1/2 cup sour cream
1 tbsp lime juice
1 tbsp chopped fresh cilantro
1/2 tsp adobo sauce (from canned chipotles in adobo)
1/2 tsp table salt
1 tsp garlic powder
For the Tacos:
8 small corn or flour tortillas
1/4 of a cabbage head, finely shredded
Fresh cilantro leaves, for garnish
Lime wedges, for serving
1/2 cup diced tomatoes (optional)
1/4 cup diced red onion (optional)
1 avocado, sliced (optional)
Instructions
Prepare the Salmon:
1- Preheat your oven to 400°F (200°C).
2- In a small bowl, mix the olive oil, onion flakes, chili powder, paprika, garlic powder, salt, and pepper.
3- Rub the spice mixture all over the salmon fillets.
4- Place the salmon on a baking tray and bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
Make the Fish Taco Sauce:
5- In a medium bowl, whisk together the mayonnaise, sour cream, lime juice, garlic powder, adobo sauce, and salt. Adjust seasoning to taste.
Assemble the Tacos:
6- Toast the tortillas in a toaster for a few minutes to achieve a U shape.
7- Flake the cooked salmon into bite-sized pieces.
8- Place some shredded cabbage on each tortilla, followed by the salmon, diced tomatoes, red onion, avocado slices, and a drizzle of the fish taco sauce.
9- Garnish with fresh cilantro leaves and serve with lime wedges on the side.
