Rob, you have inspired me so much. One thing is that I like almond milk in my coffee and other things. I can go through 2 x 1/2 gallon cartons a week! I know the cartons are not recyclable and so I have started making sure I always have almonds on hand and I make my own almond milk! 5 parts water to one part almonds with a little maple syrup and a dash of salt..... and I have the pulp for adding to other recipes. Thank you for being such an amazing inspiration for so many people!
Try experimenting with local nuts. Find the origins of your almonds. Here in Brazil I use Baru, that helps the preservation of the Brazilian savanna (cerrado) protecting it against GMO soy plantations , and I use brazil nuts. Almonds here come from Chile and they have a bad reputation of diputing scarce water resources.

Is always being my dream to go back and give my children that opportunity to experience that. Also have small sustainable cabins so people from the largest city can come and disconnect from their busy life style.
I am learning ways to gradually shift into this kind of lifestyle. I simply don’t enjoy city lifestyle and often crave being with Mother Nature. I hope I will eventually be connected to a community of people who can advise and share knowledge on how to transition to off grid/sustainable lifestyle/minimalism.
