- Smoked Beef Jerky in a Pellet Smoker is easy to make, it tastes awesome, and its a lot of fun. In this video we used Flank Steak for our Beef Jerky. Flank Steak is a great choice for a full flavored batch of beef jerky.
We set the smoker to 175 degrees F and smoked it for about three and a half hours. Best Jerky we've ever cooked.

I know the directions say different but I like to add the marinade,cure and 2 tablespoons of water all together in a Ziploc bag. I mix it up completely in the bag before I put the meat in it. I then let the meat sit atleast 24hrs and periodically move it around while it's marinating. It's turned out well for me this way on my pellet grill. I like to combine different marinades together as well.
I tenderize my jerky with a mallet. It makes it very thin. Salt. A little steak seasoning. Then in the pitboss. Crispy yet melts in your mouth.

I've yet to do a jerky video and why I'm not sure, but watching this makes me want to give it a go. I love beef jerky and smoked is the best! Awesome job on the jerky Mike and looking forward to the series! That Pit Boss is perfect for this!

My question today for you is related to this jerky video - and beef jerky is near the top of my list of things I'll be doing soon! Can you provide a link or info on the jerky racks you're using? You mention "third party" I think in the video, but didn't mention anything else. It looks like what you're using slides right in the box as if it were made for the Pit Boss. I also have the Series 4 and am looking for some racks to smoke some jerky. If you or any followers have a suggestion, I would appreciate it. Thanks!
I used your method for making jerky couple weeks back and people went ape shit for it. So gonna make it once again today. Have a question for you on the smoker. Did u notice a temp change without the water. I use an extra thermometer on the inside and it reads about 30 degree diff than what the smoker therm says. I've tried diff ones and it's the same everytime.

Man I just forked out over $700 with shipping and taxes to get the series 7 smoker from pit boss. The website says it has a minimum temp of 100 degrees. Nope the minimum temp is 150. I do my jerky in a step stage starting at 110 degrees for 30 minutes to dry the marinade to the meat then step it up. I’m so disappointed in this purchase. But I’ll make the best of it. Thanks for making this video. Tomorrow I’ll be smoking turkey breasts. I’m excited about that. 👍😁
Bummer about the temperature setting deception. I like this one enough that I just forked over 700$ for the sportsman 5 series.
The vertical? Website is 150. I know some of the pellet grills are 180. I didn’t see anything around 100.

Must do this! I have the jerky racks for my Camp Chef, but have never made jerky. They have been great for everything else so far though.

Try high mountain buck board bacon cure it makes good Canadian bacon .

Love the videos Mike. Picked up a series 5 a couple of months ago and you have been instrumental in helping me smoke meats. Just smoked up some jerky using this exact recipe today and I love it! Just curious does this need to be refrigerated after it has cooled down? Saw some other recipes online instructing to refrigerate after smoking. Keep up the good work bud!

Man they are a great company. I made a critical error one night and burned my control panel up. All they asked for was my serial number and model and sent me brand new parts within four days. She is currently smoking a pork belly. Great great company!

If water vaporizes at 220° F at atmospheric pressure and your cook temp is 160° ish why the concern to not add water to the pan?
What setting did you have it on?

What gives the beef jerky that nice red glossy color? Or is it the curing powder?
It comes mostly from the smoke
Where did you order your racks from?
Do you leave the water pan empty for jerky? I’ve found if I fill it up it turns mushy. But I wasn’t sure if having it full was important because they say it can catch fire.

Looks awesome! Curious to see which cut turns out the best? Do you think it would be okay to pull at the 2 hour mark? I have a friend asking for jerky but he has sensitive teeth and needs somewhat tender.
You could pull at the two hour mark but that kind of jerky needs to be eaten within a couple of days. You wouldnt need the cure either... just use your fav rub.
Frankbuilt, if you cut across the grain, the pieces are easier to bite apart, rather than tougher bites if you make your jerky cuts with the grain. Hope that helps too!
How do you get your to smoke so much? I have the same one as you and I can’t seem to get it to feel up with smoke like you’re.
Usually just before I turn the camera on I open the door to make sure my camera focuses on the right thing. Then I close the door and start recording. I'm guessing that you are seeing more smoke than you are used to because my smoker is trying to recover and starts pumping out pellets.
Do you use a specific brand of knives?
Not really. I have a bunch of really old knives and one really nice slicing knife
I have a question, im looking into buying one of these pit bosses, have you had any issues with it? Like codes going off and shutting the smoker down?
I did have an issue on my first Pit Boss which was really frustrating... the controller malfunctioned and shut off midway through a brisket cook while I was asleep. $70 brisket went right into the trash.
I will say though that this is a risk with any pellet cooker.

What you are seeing in this video is the 5 series Sportsman. I have had no problems/error codes since buying this in July of this year. The smoker I had the issue with was the 3 series
Yeah I guess ill have to think about it. Seems people love there pit bosses for the first couple months then it goes down hill from there. Maybe juat get a cheap charcoal dyna glo or somethin. I like the sound of the pit boss but it seems sketchy
A Weber Smokey Mountain or a Pit Barrel Cooker are excellent charcoal smokers.

I havent shared the link because the company I bought them from on amazon changed it to the jerky racks AND cooking grates which adds cost. If you want to check them out the company is called Unifit. I dont want to put a link out there there makes people spend more money than they have to so I hope you understand.

lol. I'm a road warrior as well. I travel a three state territory (Michigan, Ohio, and Indiana) and I am in the commercial door hardware business... Monday through Friday I'm on the road/ getting that windshield time... Saturday and Sunday I BBQ :)
