    I think the reason why nasabi nila na dapat daw ang "Authentic" na baby back ribs shouldn't fall off the bone dahil part of the experience yung pag ngata sa buto ng mga leftover meats, otherwise para ka nalang kumakain ng pulled pork na dinikit sa buto. Great episode Ninong!

      Agreed may point ka dun sir. Tska tingin ko presentation wise din. Pag fall off Kasi kahit gaano ka talim ng kutsilyo mo or brisket knife punit talaga yan unlike pag hindi fall off pag ginamitan mo brisket knife ang linis ng cut ang ganda tignan.

      Yup, Chaka Kung iisipin niyo , parang sobrang Dali kasi nung fall off the bone. Low and slow lang naman na luto yun. “Overcooked” as long as hindi dry . Mas mahirap and mas kelangan ng skill ung tender ribs sakto lang tapos juicy

    That talk about mediocrity at 41:17 really helps. Im a graduating architecture student and I know what it feels like to be called mediocre or have mediocre works (Especially kapag kinukumpara ko yung gawa ko sa other classmates) Di ako satisfied sa sarili kong gawa, everything he said at the end was true and I 100% agree with it.

    yung Garlic powder saka Onion powder ang ginagawa namin is nilalagay sa ref. kahit opened na yung pakete or kahit naisalin nyo sa maliliit na bote. basta sa ref nyo i keep. hindi sya titigas

    I think this is even an easier recipe that I do without the nilaga taste - dry rub, pressure cook for 25 minutes in 1 cup barbecue sauce, 1 cup water and half cup apple juice OR 1/4 cup apple cider vinegar. Great if you can get the ribs to stand on its side inside the pot. Just brush with barbecue sauce and torch after. 😊

    Fall off the bone is considered overcooked by many bbq professionals and enthusiasts. It should be tender but still have enough chew to enjoy the texture of meat. American bbq judges look for a clean bite where you can easily bite through the meat without it tearing unevenly or completely pulling the meat off the bone. Sauciness and sweetness versus dry rubbed only and savory is just a matter of style and preference for and individual taste or from a bbq region. A bbq rib can be sweet and authentic… just as much as a savory dry rub only rib can be authentic.

    ninong.. sana po mapansin. yung nilaga na pinahiran ng bbq sauce? alam ko para mawala ang nilaga vibes :) kasi ganyan ako mag bbq samin ng walang smoke or walang ihaw ihaw sa home setting ko :) pwedi ko share sa inyo :) without using blowtorch :)

    Ung sa Peri-Peri po ehh ako grill man duon po and ang sa tingin ko ehh ung Baby back ribs namin is "sous vide" cooking then after nun ilalagay sa Grill before rubbing ng bbq sauce... mejo maaking difference din pag na grill n asiya kasi may smokey flavored din siya

    nasasarapan ka lang sa pangalawa kasi me asukal at sanay ang panglasa mo sa asukal. ako kaya kong magluto ng masarap ng di gumagamit na asukal. kulang sa research si ry sa asukal at sa history nito sa pagkain kaya halos luto nya matatamis para maglasang masarap. 🤣🤣🤣

    yung bbq sauce kasi afaik and from my own experience optional lang ayan.
    dry rub lang sapat na para nandun pa din ung totoong lasa ng karne kasi ang nag papasarap sa mga smoke ribs ndi yung bbq sauce kundi yung smoking process.
    halos karamihan ng homemade na smoke ribs sa US, ndi naglalagay ng bbq sauce maliban na lng if mga resto or dine in kasi may mga tao pa din na preferred nila may bbq sauce pero punta ka sa mga Texas, Tennessee, Missouri at Carolina malimit sila mag lagay ng bbq sauce sa smoke ribs.
    mga filipino kasi may preferred lage sa pag kain, either matamis or maalat.

    Tama yung lasa nung kumakain dapat na nasusunod pero kumplikado kadalasan kasi nagiging marunong pa sila sa nag luluto at kadalasan nagugulo tuloy yung lasa.. minsan din na experience ko may nagpaluto sakin ng sisig tas request nya walang sibuyas..sabi ko nga hindi po sisig yun dahil main ingredients ng sisig ay sibuyas pero sinunod ko tas nung maluto bakit daw parang kakaunti😂😂😂tas ipapakalat nila na yung nabili nilang sisig ganun😂😂 so dapat maging maingat din tayo lalot ns ganung negosyo ka dahil kadalasan yung iba nanunubok.

    Pa notice ninong.. sa nag sasabing hindi dapat fall to d bone, hindi lng nila kaya gawin sa tagal.. kasi interms of smoking around 8-10 hrs para maging ganun at manuot ung linamnam.. kahit salt and peper lng basta smoking..

    Easy mode medium to pinakamahirap chef ninong Ry sa isang lutuan pwede it ends sa griller vulcanic rock o uling man pang ilalim,bar b q sauce di niluluto po namin pour namin sa ribs sa oven ,worcestershire,tomato ketchup brown sugar,sweet paprika and ground black pepper,no need namin na lagyan mustard kasi sa dry rub may mustard na aagos naman yon sa drippings at yon pinaka sauce po sa finished product

    Ninong ry... ask ko lang... will it differ ba kung instead of oven ang gagamitin is broiler in terms of texture, cooking time, Temperature, and approach sa pag gawa ng gantong ribs given na we used the same flavors added...

    Para mawala yung nilaga taste. Sinasama ko yung bbq mixture dun sa pagpapakulo para pumasok din yung flavor sa loob. All goods lang yung tecnique dun sa una speacially sa mga filipino house holds suited na para ma satisfy yung cravings

    naisip ko lang ninong, yung easy version, bakit hindi natin dagdagan ng isa pang step... like after mapakuluan i grill sa sa open fire while basting nung barbeque sauce... that way mawala yung moist sa loob ng meat para hindi mag lasang nilaga..
