Just a heads up: You can make this without an ice cream machine. You have to put it in the freezer and use a stand mixer to mix it again after 40min and need to repeat this at least 3 or 4 times. It is harder, but works

My new ICE CREAM MAKER was a huge challenge, it tested me to the limits but I wasn’t going to let it beat me, I did everything by instructions with you & machine, I poured mixture into churner after 20mins x 2 it was still like pouring cream but tasty lol…so I decided to place the whole batch into the freezer without lid of cause, 1.5 hrs later it was half frozen so put it back on to mix & 20min later back to creamy milk I nearly cried, but no way was I going to let it beat me, so back into the freezer every 30 mins I turned the paddle 4 times for 2.5 hrs & hallelujah I beat it great success, it now in its containers & waiting to be devoured, it was worth every single minute of struggle, if it didn’t work out then I was just going to drink it as a milkshake lol I’m 65 yo and I can tell you I licked every single bit that was left behind on the paddle & bowl & I have no SHAME in saying so 😬😬 but this may be a huge mistake once hubby try’s it tonight….think I may have to invest into a better Ice Cream Machine 🥰 I will known how to conquer it next time ….tomorrow 🥳🥳🥳🤣😂🤣😂🤣😂 sorry love my emojis “YOU ARE A GENIUS ❤️🌺

Made this today, it is absolutely delicious, the salt seems to seriously enhance the flavour much as it does in salted caramel. Sadly for me I'm trying to drop a few pounds right now so only allowed myself a 100g serving since it packs quite a punch on the calories, around 365 per 100g by my reckoning. On the bright side it does mean it will last at least another 4 servings for the pair of us (well maybe 3 :P).

just curious, instead of warming up milk and tempering your eggs mixture cant you just put the egg mixture in with the cold milk and cream to warm together?

I added it after the custard mixture sat for 10-15 minutes and none of it combined together, it's just little floaty chocolate bits in the vanilla cream mixture. Feels like I should have added it when it was thickening after adding the eggs. My mixture definitely looks unappetizing for chocolate ice cream :\
Never had frozen custard. Need to try frozen custard! But first I must eat some meat to make room in the freezer for the ice cream maker bowl lol. It’s dairy, which means the color can vary depending on where your milk / cream is sourced, specifically, what the cow it was sourced from ate. That is why, butter, cream, don’t always have the exact same color.

Guys, what is Shake Shack anyways? It's an ice cream shop right? In Malaysia, we have other ice cream shops but we never have an ice cream shop called Shake Shack before.
I made the custard ice cream I don't know what I did wrong it wouldn't thick and up and I was stirring and stirring I thought it's gonna get scrambled eggs for a minute so I just took it off the stove I added corn starch and now I'm just waiting for the end results so like I said I don't know what I did wrong
It might be the cream. Did you use full fat? A lower fat content means the water content of the cream would be high. That will take a little more time to thicken.
I do not add salt to mine as salt depresses the freezing point and causes a coarser texture. Also, all ice cream or custard mix should cool for at least four hours as it takes that long to completely chill that fat cell. Also if you have to strain your mix you are not doing something right as you are not getting everything into solution. I never use milk when making mine just 1/2 & 1/2, Cream, Sugar Eggs Yolks, Corn Starch, Vanilla. You can hear your arteries clogging. Former Production Manager in an Ice Cream plant.

Hi Matt. What prevents ice cream from crystallizing when frozen, is liquid sugar. I use condensed milk in my other recipes. Alcohol also helps.

I added it after the custard mixture sat for 10-15 minutes and none of it combined together, it's just little floaty chocolate bits in the vanilla cream mixture. Feels like I should have added it when it was thickening after adding the eggs. My mixture definitely looks unappetizing for chocolate ice cream :\

Never had frozen custard. Need to try frozen custard! But first I must eat some meat to make room in the freezer for the ice cream maker bowl lol.
Also, I’ve been looking at getting a better ice cream maker. Thank you for including the machine noise in the video as I now know I do not want a Cuisinart! I’ll go with the Breville.

I'm sure it's gonna freeze up great, but I just wonder why mine looks more yellow than yours. I used the same large egg yolks.
It’s dairy, which means the color can vary depending on where your milk / cream is sourced, specifically, what the cow it was sourced from ate. That is why, butter, cream, don’t always have the exact same color.
I make this all the time and add nutella and instant coffee to it. I never buy store bought ice cream anymore.

I made the custard ice cream I don't know what I did wrong it wouldn't thick and up and I was stirring and stirring I thought it's gonna get scrambled eggs for a minute so I just took it off the stove I added corn starch and now I'm just waiting for the end results so like I said I don't know what I did wrong
It might be the cream. Did you use full fat? A lower fat content means the water content of the cream would be high. That will take a little more time to thicken.
I used fill fat milk and 35% cream

I do not add salt to mine as salt depresses the freezing point and causes a coarser texture. Also, all ice cream or custard mix should cool for at least four hours as it takes that long to completely chill that fat cell. Also if you have to strain your mix you are not doing something right as you are not getting everything into solution. I never use milk when making mine just 1/2 & 1/2, Cream, Sugar Eggs Yolks, Corn Starch, Vanilla. You can hear your arteries clogging. Former Production Manager in an Ice Cream plant.
