There a million videos on how to de-crystalize honey but this is the first video I could find that I'm actually looking for

Right? I had a small jar of honey crystalize on its own in the back of my cabinet over about a year. I didn't even know it was a thing, but it's so much better. The reason it was sitting the back of my cabinet for so long is that I'm kind of so-so on liquid honey, but I ate the crystalized version in like a week.

Real. I only tasted liquid honey with some little crystals in it, but it was a lot better, since it was sweeter. Regular honey has a too strong taste for me.

I recently got honey from a beekeeper and asked if they had any crystallized and they sent plain jars but lucky for me I had some of the same honey crystallized left only about 2 spoonfuls and just put one spoon full into the plain honey I’ve had in the fridge for about a week already if that works I will use the other spoonful for another jar and then these jars for my next.. thanks for this video couldn’t find any others like it everyone wants to ruin crystallized honey and melt it back but don’t know what there missing out on such an amazing texture

Update it worked beautifully i figured out how to “seed”/force crystallized honey from plain honey with the help of a teaspoon of crystallized and throw it in the fridge and keep stirring until golden then remove and leave on the table for the day to let any moisture settle and then pantry it became beautifully smooth with a more developed taste and aromas

Excellent informative video!! Here in Maine I tried red raspberry honey due to the bees feeding on the pollen and nectar and it tasted spectacular. I heard that bees on goldenrod plants will have honey that tastes of butterscotch. What kind of honey is your favorite and what kind of wildflowers are around?

    • @Anders_pa_landet

Thank you :) We have lots of raspberry here as I live in a mixed landscape with quite a lot of forest. So early summer thats the bulk of my honey. Goldenrod is not indigenous to Sweden os Ive never tried it. Otherwise I like rape honey which I get when any of the nearby farmers grow rape - extremely mild and almost white honey. I also like heather honey but we only get that every four or five years when the heather produces nectar. Very aromatic and sometimes almost black honey the opposite of rape.

I see. I'm going to get my own beehives hopefully next year. Sadly many places here in the US heat and kill the beneficial health giving raw enzyme properties of the honey. They advertise it raw when it is a misled falsehood and over here we need to buy RAW UNHEATED honey for it to be legitimately raw with life giving enzymes.
Can you give me the scientific plant names of the two favorites that you fancy? Rape & Heather plants.. I'm going to google them as well.
Have you ever bothered using those Australian made flow hives before? They have spigots that go in the back of the beehive that you insert when you take the backside of beehive cover off. I forget the name where the bees put the honey but these plastic artificial honeycomb molds are supposed to be nontoxic. Any opinions on this being ok? I noticed one can buy cheaper replicas made from China in Amazon dotcom. What happens is the specified flower or blossom nectar gets separated and not all the wildflowers are intermixed so it is really slick. You do not have to open the top of your beehive.

Awesome, thank you. I like also how your method seems to make microcrystals. I'm additionally looking for a way to take crystal honey and remove the water leaving "honey sugar" - have you made this before?

Not the same, to ferment honey you usually need to add water.

      1. If you refrain from stiring the honey the crystals with grow large. Just put it in a refrigerator.
      2. No idea, never heard of it.

Damn this guy goes way too far. This is more of a Butter-ized honey. I am going to make some.
To get a good crystalized Honey just find some that is already crystalized (just to help speed the process, can do this without but will take a hell of a lot longer) and mix it, by hand if fine, in an empty butter tub. Big Tubs - Yeah I make lots of it. Place in Icebox over night, take out till it is room temperature and put back in icebox. Repeat this for a few day. Yes Cold then Warm. There is a perfect time to leave it at but not easy to just Hit that temp and hold it there. The more days you Chill & warm the thicker it will get. It will get pretty solid if you keep going.
Yes I find it to take a little different, I use it to kind of creamer my coffee.
    To each his own.
