They use these things called "nets" that go over the grapes to protect them. Funny story but the first year they attempted this they didn't net the vines and literally one afternoon a whole flock of birds descended on the vines and stripped the vines clean.

Not a lot of birds that time of year, and during the day they fire blank shotguns at the birds to scare em off
