    First time - I rose to the challenge & brined the turkey half for the 24 -hours and cooked it tonight! OMG! I am still eating it out of the pan on the stovetop. Nice accompaniment was asparagus & pine nuts roasted with olive oil, cracked sea salt, and cracked pepper! Awesome!!! Thank You!

    I wish I ran into this video before. I cooked my first turkey breast for Easter ( daughter always wants turkey). It came out great but I spent 2 hrs trying to figure out how to do it. Could have learned in 15mins from you!!

    I have brined our turkeys for years now and have found that ( for us anyway ) that after brining for 24 hours, it is best to give the bird a rinse with cold tap water and then pat dry as it can taste too salty otherwise. Also, the seasoning the bird gets while sitting in the brine gives the bird plenty of seasoning without adding any additional seasoning. To each their own.

    When I do turkey or chicken breast I actually remove the skin, pat the meat dry, smear the butter mixture on, then replace the skin and tack it down with toothpicks.
    The skin doesn't shrink as much and IMO it's less of a hassle than trying to shove the butter into such a tight space

    Why shouldn’t you use the herb and garlic from the brine? I feel that still has good flavor. Is it a health issue?

    I always do.a fresh herb rub similar to what you had on my turkey breast . I am contemplating trying your brine. Was that an extra large zip lock bag?

      Yes. This is just your brine. It has to be salty. The flavor is going to soak into the turkey, then you're going to pour out the brine liquid completely. I understand your hesitation. If you were seasoning the turkey directly, that would be way too much salt. But you're just making a liquid for the turkey to marinate.

      Don’t forget to rinse turkey after taking it out from the brine. I did not rinse mine yesterday, because that was not one of your steps and it was way too salty after roasting. I had to cut off a lot of the outside meat to enjoy. I did enjoy the flavor, thank you for the wonderful recipe.

      Be sure to keep it refrigerated the entire time and you should be fine. I would check it every 6-8 hrs afterthe first 24 hours just to be sure she's ok.
