      Thank you for an easy to follow video and recipe. This recipe, brining and cooking the turkey is so helpful! This is my 1st time brining and so far it has gone well. I'm also trying your apple cobbler. I like the more rustic feel to this recipe! Question? When you say air dry one day after 2 days of brine, do you place it in the refrigerator uncovered?

    Reporting back: HOLY MOLY. I've never had a turkey so good, so aesthetically pleasing, and this video gave step by step instructions/Insight from start to finish. I finally convinced my parents/inlaws to ditch the cooking bag. 10/10. My husband is excited for turkey sandwiches today, that's a first!

    First time cooking turkey and I did this recipe. OMG everybody talks about how juicy, soft and delicious was! I 100% recommend this recipe. I am so thankful I found this recipe. I was easy to make too. Again, 1st time making turkey and I feel so happy and proud of myself taking the chance making it 🙂

    I used your recipe for Thanksgiving this year. Easy to follow and my turkey and gravy turn out great. I loved the herb butter. Will be my go to recipe in future. I used a different brine but will try yours next time. Thanks for the great video.

      Where do you get compound butter or is it made,, where there slowly boils then cools? Can use just butter???

    I followed this recipe, but used a bundt pan. This recipe is a keeper. I will change a few things on my next carrot cake:
    -1/2 cup chopped pecans, no raisins.
    -grease the bundt pan really good with unsalted butter (instead of non-stick spray)
    -bake for 47 minutes, cover half way through.
    -Let it stand for 20 min, the flip the bundt cake on a wire rack.

    This recipe is amazing. I made two turkeys on Thanksgiving. One I took to my parents house next door for the family meal with everyone. Then when I came home I cooked one for myself. I made myself just a breast on the bone. Will be using this recipe at Christmas.

    Using this recipe this year. I saw that you added cream to the gravy , question did you use heavy cream ?? 1/2 and 1/2 ??? …oh ! I ordered a fat separator …this girl is ready for the challenge, thank I so much .

    Would the brine work without the sugar? I’ve got a type 1 diabetic. Thank you xx

      We have never tried this brine without sugar. It balances the salt nicely. It is also impossible to know how much sugar gets into the meat. There are other brines that do not include sugar so you may find that removing it in our case would still work well.

    I mistakenly dried my turkey with paper towels after I took it out of the brine. Is that a problem? I put it in the refrigerate to further air dry overnight before I roast it tomorrow. I hope I didn't ruin it! It had been in the brine since Monday night.

    what is your recommendation if your turkey is frozen? Should I still brine if it is frozen?

      We recommend brining and roasting a thawed turkey. So if you have run out of time for thawing and brining, just use our herb turkey butter and roasting instructions.

      Hi there, I'd probably just use the same amount, but you can cut everything in half. (make sure you keep all the ratios the same)

    I am trying to figure out something on the cooking time. 15 pound turkey baked at 325 degrees per 14 minutes per pound. I must be missing something, cause I can`t come up with 3.5 hours of roasting. Help me out here please.

      14 min/lb x 15 lb = 210 minutes
      210 min × 1hr/60 min = 3.5 hrs
