      He’s a nice guy but he doesn’t think MSG is authentic Asian seasoning, MSG was discovered in the early 1900s by a Japanese guy, it’s a byproduct of drying seaweed. Also there’s nothing wrong with eating shrimp that hasn’t been divined, I do it all the time.

      I am surprised that Chinese Malays speak Mandarin rather than a more southern Chinese language (like Hakka, Cantonese, Teochew or even Wu)

      ⁠@@Noblebird02u meant Malaysian Chinese? Well, their (and other Southeast Asian nations) forefathers came from south China so there’s everything u mentioned except Wu, not forgetting the majority Hokkien and another smaller minority, Hainanese.
      Actually Mandarin only started to be ‘normalised’ and widespread almost a hundred years ago in China after some years of standardisation beginning since the overthrowing of Qing dynasty. As a result, overseas Chinese schools founded by Chinese immigrants started to adopt the new standard thereafter and over the years from Gen Y start to displace other southern Chinese languages

      @@Noblebird02 The word ‘Malay’ refers to race rather than nationality. That being said for me as a Chinese Malaysian, my impression has always been that we actually speak Mandarin as more of a lingua franca between Chinese of different backgrounds. As there are Hainanese, Cantonese, Hakka, Hokkien, Teochew, Foochew, and more that I probably don’t know about, Mandarin is used as a working language between them while the dialects itself is more used within their own family or community like if they were from the same village or town that speaks the same specific dialect. As for me, Hainanese people are more of a small minority from where my hometown is, thus, I never got to use it or practice it other than with my paternal grandparents and so I slowly lost it after their passing. My parents are both Hainanese & Cantonese respectively so they spoke Mandarin to each other while speaking it to us as well. So it didn’t feel right speaking different dialects to them. And what was left was Cantonese that I picked up from my maternal grandparents who live in a community that mostly have Cantonese people or speaks Cantonese. So I only spoke Cantonese whenever visiting my grandmother and to other people there besides my mother (though I do speak to my mother in Cantonese for fun at times). But either way, besides those situations, Mandarin usually is the way to go usually as that’s the common language for Chinese people in not just Malaysia but also the greater Chinese speaking world (Taiwan & China) [don’t cancel me].
      Anyway, hope that explains why.

    The Chef is really a good heart man and so polite. When Uncle Roger mimic to eat the Shrimp Vein he really thought Uncle Roger will eat, so he stop him immediately. Re really deserve more customers. God bless him. ❤

      I don't think this is a particularly Asian thing. my very Irish grandma gave me a big butter cookie tin full of buttons and other sewing stuff when I was a kid, in the 70's. I'm glad to see this may be a world wide trend though :D

    For those non-Asian who are wondering, objectively speaking, Thai durian are generally bigger in size, more flesh with relatively smaller pits, the flavor is milder and softer (usually cheaper as well). On the other hand, Malaysian durians are generally smaller, less flesh with bigger pits but better flavor. The best durian varieties such as musang king and black thorn are both Malaysian. In short, if you want flavor, Malaysian durian is always the way to go. If you want a better bang for your buck, go for Thai durian.

      Malaysian here, I think Uncle Roger don't want bad mouth Thailand durians so he say almost as good as Malaysia 😂. Malaysian durians is softer than Thailand anytime as Thai people prefer unripe durians not naturally drop from trees. If you eat Malaysian durians Musang king must eat them frozen, they taste like ice cream! Any fruit thawed will be mushy soft after all. Malaysian durians is creamy with a bitter sweet taste strong flavour

      Keep plugging along. It takes time (especially to learn to read) but is very doable. I was one of the few white boys in Chinese class at the uni back in the 1980s. Having lived and worked in Taiwan and China I still use it today.

    Even without the Michelin star this place is high end. Have eaten there a few times but only for special occasions. I can vouch for that shrimp!! A reservation is highly recommended as it gets packed. Uncle Roger fortunate enough to dine while it was closed, he got the special treatment for sure!

      Remember, light soy sauce is for flavour, dark soy sauce is for colouring. Sometimes you just want flavour, but don't want to darken your dish. Use light soy sauce, not the kikkoman brand (use that for Japanese dishes along with sake and mirin).

    Bistro Na 那家小馆originated from a small alley in Beijing (2nd ring), close to where I lived. It is a very beijingese traditional restaurant, and one of my fav memories of Beijing. Everytime when I go back I try to visit. The menu changed a lot, and they started to be a chain. I still love it. Good pick uncle Roger!

    First time I ever encountered durian (knowingly) was while working security for a large office building in downtown Seattle. One of the office spaces reported a nasty "trash" smell and since it was spring time we were initially thinking it was the scent wafting up from the alley below. I walked through the area reported and narrowed it down to just a few cubicles, one of which a nice gentleman was enjoying some food on his break. It took a good 10 min for me and 2 other staff to put it together the smell was coming from the fruit, which is when we spoke with the guy and asked him what he was eating. Mind you, I was a corporate security officer so I wasn't wearing BDUs and a shiny badge or any other obvious "security" uniform pieces, so thankfully we came off very unthreatening. He explained it was durian and a fruit native to where he was from. To him and a lot of native Asian people it smells great and tastes as good, but to others it has a range of bad smells from natural gas to bad trash. I simply took a report, no harm no foul, but his staff had to let him know this type of ethnic food would fall under the same category as cooking fish or popcorn in a company breakroom.

    Uncle Roger... this is probably your best video ever! One important factor that made it great is that your English is perfect, with an American accent, so good that my mother did not believe that you were Chinese (from Malaysia). She thought you were American. (I warned her that you could be "naughty" in your videos, but she overlooked it because you are so funny. I was not sure either. I speak a couple languages and I know that English is difficult. You must be pretty damned smart to pull it off that well! I worked for a Chinese family in their restaurant when I was a teenager (and I was still cool then) but they were from Hong Kong and spoke Cantonese, not Mandarin. I learned a little bit of Cantonese from working for them (Kong and Sui-lan) but now I only remember enough to order lunch. But seeing you just talking with the fish manager and the chef in Mandarin really gave you the "street cred," if you will. Legitimacy all day. It was awesome. I hope the chef really understood that you do comedy and he was not offended, because he seemed to be a good sport and a nice guy. If you are ever interested, I make the best Chinese-American eggrolls you ever tasted. I got the recipe from the family I worked for and I have made them for my family and friends since then, for the last 35 years. Imagine being an American kid, working for a family from Hong Kong, in their restaurant... in Germany... in the 80s. It was a wild ride! But I grew up with a lot of Asian family friends (Chinese, Vietnamese, and Thai) and so Asian food has always been a part of my life. But of those, other that Vietnamese Pho, Chinese has been my favorite. (I only like a very few Thai dishes... I don't like seafood.) I have been learning to cook Korean recently (which is more complicated that I had imagined for some dishes) and is my new effort. But my offer to make you eggrolls and we laugh, makes jokes, (maybe drink a beer or two) and make fun of people is an open and legitimate offer. I have pretty credible homemade kimchi too. And yes, I always use MSG... on everything. Even Western food. I usually buy Ajonomoto. FUIYOH!!!

    The closest Asian super market that has a fish counter is about 45 minutes away and I do a lot of grocery shopping there. I still occasionally have to go to the Chinese super market to buy ingredients that are harder to find. I live close to STL and am glad we have such a variety of shops available.
