    Really shows Gordon is not only a good sport, but he knows how to play the media in a way how fans like to see. A bit of tongue-in-cheek squabbling and call-outs, and then a wholesome collab somewhere down the line. Smart man.

      The same thought came to my mind when I was watching an episode of Australian Masterchef last night. Jamie is worshipped like a god here, at least by the contestants and being a judge here, he struts around like a peacock... slightly condescending and those worshippers don't even notice it.
      I don't like either - Jamie or Gordon and NEVER use any of their recipes, but Gordon does not have the arrogance that Jamie has.

      @@ricklee5845 I suppose you're referring to the newest season of MasterChef Australia. If so, sad. Jock will be even more sorely missed, then! And as someone who uses some of Gordon's recipes (not all), may I know why you don't like them? I don't care either way, it's just curiosity. Like, I think his scrambled eggs are pretty good, but then again, that's not HIS recipe at all, so I think you probably have a good point.

      @@alexandresobreiramartins9461 Watching Gordon triggers vertigo in me. That aside, none of his recipes make any sense. He's trying to elevate too much... he elevates where nothing can be elevated. He improvises too much.
      Like Jamie Oliver, he's got the use of olive oil completely wrong. Both behave like rock stars while they're forgetting the importance of balance of spices and herbs and other ingredients.
      Gordon did a 'grilled cheese' not long ago which was a disaster. Just NOW I watched another one, called - Gordon Ramsay Makes a Grilled Cheese Sandwich (WILL IT MELT??) - it's on the Hexclad channel.
      This one is even worse, despite his self-propaganda. The comments under that video you might find interesting 😊😊

    Gordon Ramsay gave Uncle Roger a complete set with Hexclad pots and pan. I think Uncle Roger did a good job, but it wasn't exactly the most complicated receipt in the world. But well done and it looked good.

    There’s a reason Uncle Roger has Ramsay's pans; Gordon gave them to him in person! They’ve met, and had an hour long conversation on Jamie Oliver mostly.
    Speaking of Jamie, Uncle Roger offered on his most recent video that when Uncle Roger reaches 10 million subscribers, he’ll cook with Jamie. He’s never so much as acknowledged Uncle Roger in the past, so I doubt he’ll take him up.

      Why not? Uncle Roger is one of the most recognisable names in the cooking world who is not a chef himself. Chef Ramsay would be insane to not use their connection to promote his book.

    Chef James, I love Your kind, positive energy! Uncle Gordon gave those 2 hexclad pans to Uncle Roger as a gift. Uncle Roger freaked out when Gordon used a metal utensil in the pan during a reaction. Gordon wanted to prove that He was not damaging anything! Keep up the great work Chef!

    Good thing to mention. If you are going to use wooden skewers it's a good idea to soak them for a bit in water so they don't burn when deep frying the fish.

    "Unless you want a scar that you will remember for the rest of your life". I have such a scar! Bacon grease went all over my left arm. This was during COVID and the urgent care turned me away because they were overrun with COVID cases. I had blisters the size of ping pong balls, but they said I should try the emergency room, which also turned me away. It wasn't until the next day when I found another urgent care that would take me. Yep, I have the scar!

      use cold water to take the heat out of it then petroleum jelly to moisturise and prevent infections. thats all they will do in emergency room anyway.

      @@spacechannelfiver actually, NOT cold water. but luke warm, if that's the correct translation. Cold has an effect on the skin and temp differences are too high.

    "When in doubt, chuck it out." This is a motto I live by! In fact, I'm probably over cautious, I won't even use meat on the last day of its "use by" date. I have Crohn's Disease and get sick enough as it is and I'm not going to do it to myself! Also, the dish Uncle Roger cooked is very healthy, the only part that gives me concern is his use of seed oil; peanut oil, avocado oil and ghee are healthy options as is olive oil (though I wouldn't deep fry with olive oil because it's too delicate nor ghee, because it's very expensive). Thanks for the video, Chef. I haven't dropped in for a while and it's so nice to see how much your channel has grown and how confident you've become as a host.

    Barcelona is a nice city, from what I remember. Walking down Las Ramblas and looking at the stalls and street entertainers is one of my fondest memories. I would absolutely pay to see uncle Roger and Jamie go saucepan-to-wok in a kitchen. Celebrity MasterChef, maybe?

    I remember the cook off Uncle Roger had with Nick. They were making egg fried rice and Nick claimed he was using Jamie Oliver's recipe. He didn't follow Jamie's actual recipe and Chef Rush, who they got to judge the thing, is a western chef, so I personally don't think he was qualified to judge an Asian dish. (He said Nick won. I don't agree.) However, Uncle Roger's egg fried rice was awesome and I still want to try it.

    Protein doesn't suck oil in it like many other things that you deep fry. You just think that it is unhealthy because it is deep fried. If you sear a steak or deep fry a steak it doesn't make any difference. The oil is just on the surface. A Chef from Finland here. Great video.

      That's interesting. I just wonder what else, apart from protein and potato chips people would deep fry... I've heard of Dixies even deep frying butter but I can't see the butter soak up oil during the deep frying process

    oddly, I dislike fish sauce on fish, but love it on pork.
    fish sauce for pork, worcestershire for beef, acid for fish, hot sauce for chicken.

    I think Gordon Ramsay's response to Uncle Roger is clever. Now we're all going to check out his channel and look at his books - Gordon's, that is. Also shows a confidence and maturity. Bought a sauté pan about 3 weeks ago! Wow! Wish I'd bought one years ago.

    Did you know in “A Christmas Carol” by Dickens, he describes the luminosity of Jacob Marley as that of a “bad lobster in a dark cellar.” Because decaying fish, shrimp, and lobster are actually somewhat luminescent. I don’t know how decayed they have to be, but I would think a glowing fish might be off-putting. I’m not sure how that intersects with cooking, but here we are. ._.

    9:33 yeah I almost caught the lakehouse on fire frying Brussel sprouts.. it overflowed and flooded the range with flames. I just stood there not panicking and it went out. I’m glad cause even though it’s a running joke to burn it down to build a new one, I didn’t want grandma sad that I burnt her lakehouse down lol.

    Uncle Roger can definitely find his way around a kitchen. You can’t BS the knowledge he has of so many different dishes from all around the world. Gordon should have challenged him to a roast beef with veggies and Yorkshire pudding and gravy if he wanted to test him.

      I wish he would gift me a set 🤣and (hate to be greedy lol) some of those high quality knives. I've never paid more than £20 for a knife (I have to live within my means) but this channel has inspired me to aim for a decent quality chef knife as my next upgrade as soon as I can afford it 😀

    Re: deep frying, a tip from a British chef (Anthony someone maybe?) ages ago was never fill your pan more than 1/3 by volume with oil. He claimed that oil can't do more than double its volume so you know it will never boil over because at most it will be 2/3rds full. That's worked for me so far.
    (Remember with something like a wok the volume increases as you get closer to the lip, so you'd need to calculate the actual *volume* of the wok, not just guess based on depth like you can in a straight sided sauce pan.)

    I always get the impression from Uncle Roger that he knows what food is supposed to taste like, and how it is supposed to be prepared, but may not possess the actual cooking skills to pull off the best food all the time. I imagine his cooking is perfectly fine for dinner, but maybe not for restaurant presentation style cooking. Let's see if I'm correct.

      I don't understand why he always says use a wok for everything, maybe it is a cultural thing? I have a wok which is great for lots of Asian dishes but I always use a flat bottom pan for fish, steak etc. I'm no expert but that just makes sense to me!

      If you cannot wear it over your head like a helmet and it's not super heavy then its possibly not a legit one.

For me (I'm a home cook not a chef) it makes sense to use the best pan for the task like Chef James has explained in some of his videos. I do enjoy Uncle Roger's videos but I agree with you that maybe he plays into the stereotype a little bit too much.

    A tangent:
    There's nothing actually wrong with frying in olive oil. People in North Africa and the Mediterranean have done it for centuries! Just pick something you don't mind having a slight olive flavor... If you use the correct olive oils the smoke point can be over 400 degrees fahrenheit. There are dishes from Greece, southern Spain, and southern Italy that are intended to be cooked this way. :)

    The idea of watching a video of someone watching a video of someone watching a video seemed absolutely bonkers to me. Until I for some reason watched one of yours...Now you got me hooked, line and sinker included :D
    In all seriousness, your content is really good! So respectfull, full of good advice based on an amazing career in cooking, and you talk with such a great calmness. Like when you lower your voice we all lean forward to listen, you don't need to scream to get anyones attention. And never ever do you use the annoying "eeehm" sound so many younger people (mis)use these days.

    Suggestion for future video(s): How about something from Korean Englishman or Jolly? They go through everything from street cooking to visits to Michelin-starred restaurants of all different ethnic bases. Josh and Ollie star in both, and Josh is married to Gabbi, who is an excellent chef herself and sometimes features in their videos, as well as having her own cooking channel.
