- A few weeks ago I was playing around with taking classic tiki cocktails and turning them into old fashioneds.
Along the way I tried to reformat the Halekulani cocktail, which showed me that I really don’t like the cocktail.
So today we’re going to make a classic Halekulani cocktail and then I am going to make my improved version.

Halekulani (Original)
1.5 oz (45 ml) Bourbon
1/2 tsp Grenadine
1/2 oz (15 ml) Pineapple Juice
1/2 oz (15 ml) Orange Juice
1/2 oz (15 ml) Lemon Juice
1 dash Aromatic Bitters
Halekulani (Improved)
2 oz (60 ml) Bourbon
1/2 oz (15 ml) Pineapple Syrup
1/4 oz (7.5 ml) Grenadine
3/4 oz (22.5 ml) Acid-Adjusted Orange Super Juice
1 dash Aromatic Bitters
1 Egg White
3 drops Saline Solution

This is a good kind of video to do. (And one of the dirty secrets of life is that there are a lot of tiki drinks that are overrated.)

It’s always good to do a side by side. Here is my version of this cocktail:
- 2 oz Rittenhouse 100 proof rye
- 1/2 oz lime juice (yes, not lemon)
- 1/2 oz orange juice
- 3/4 oz fresh pressed pineapple juice
- 1/4 oz grenadine
- 1/4 oz rich (2 to 1) Demerara syrup
- 2 heavy dashes of angostura bitters

Nice, I use Shannon Mustipher's Halekulani recipe as a starting point (shown below). Here is my recipe (lmk if you like it):
1 1/2 oz Cask Strength Bourbon Whiskey (Larceny BF, Wild Turkey Rare Breed, Makers Mark Cask Strength)
1/2 oz Lemon Juice
1/2 oz Orange Juice
1/4 oz Pineapple Syrup
1/4 oz Grenadine
1/2 oz Demerara Syrup
1 Dash Tiki Bitters
1 Dash Saline Solution
1 Egg White
Shannon Mustipher
1 1/2 oz Bourbon Whiskey
1/2 oz Lemon Juice
1/2 oz Orange Juice
1/2 oz Pineapple Juice
1/2 oz Demerara Syrup
1 barspoon Grenadine
1 dash Angostura Bitters
Looks like a good build, though I’d make a few tweaks. It’s a little juicer than I prefer my cocktails. I’m constantly looking for ways to cut down on the water content introduced from ingredients.
