Gougeres Recipe:
1/2 cup water
1/2 cup whole milk
1 stick 4 oz unsalted butter
1 pinch of Maldon salt
1 cup all-purpose flour
4 whole eggs
2 oz Parmigiano reggiano cheese
2 oz Gruyere cheese

I messed up a little with these by making them about double the size as normal. If you stick to about 1 tbsp per gougere you should be good with the 20-25 minute bake time. You can make them any size you want just make sure to bake them longer the bigger they are. Pork belly tomorrow my friends!! LG LG LG!!!

Just a tiny tip 1:40. I learned from experience - the hard way - to never, ever crack the eggs into a running mixing bowl. If you drop some shells in, you won't get them out and the whole dough is ruined. I can still hear my chef the partie screaming at me.
Better to crack the eggs into a small bowl and add them from there.
Absolutely. The egg can also be bad and you won't know it

Just wanted to share something useful from my own experience - people who want to cook this recipe at home and are perhaps less practiced may find it helpful.

tip from someone who likes to bake: if you put the piping bag in a tall glass and fold the top of the bag over the edge of the glass it’s much easier to fill and cleaner! also spinning the bag in a circle like a lasso helps get all the batter to the bottom of the bag while removing air bubbles.. just make sure you cover the opening if you’ve placed a piping tip in the bag already

Put the dough into a pastry tube and squeeze it into mini muffin tins, they come out uniform and no guessing at the bake time.

Muito parecido com o pão de queijo, aqui do Brasil. A diferença é que fervemos o leite com óleo e sal e depois misturamos com polvilho, ovos e o queijo da sua preferência. 👏🏻👏🏻👏🏻👏🏻😋😋😋😋

• 2 ½ xícaras de polvilho doce.
• 2 ½ xícaras de polvilho azedo (eu uso 5 xícaras de polvilho azedo. Não uso o polvilho doce). Mas você pode experimentar fazer dos dois jeitos e ver qual vc gosta mais.
• 1 xícara de óleo.
• 2 xícaras de leite.
• 4 ovos batidos (Caso a massa fique muito seca, você pode acrescentar mais 1 ovo).
• 350 gramas de queijo ralado (você pode misturar queijo parmesão, provolone, gruyere ou qualquer outro queijo de sua preferência).
• 6 gr de sal.
Modo de Preparo:
• Ferva o leite com o óleo e o sal.
• Escalde o polvilho com o leite fervente.
• Acrescente os ovos e sove bem (não coloque os ovos com a massa muito quente pois os ovos podem cozinhar.
• Acrescente o queijo ralado, misture bem e faça bolinhas. Eu costumo fazer bolinhas de 60 gramas cada.
• Leve para assar a 180°C por 40 a 45 minutos ou até ficarem bem dourados.
Existem inúmeras receitas de pão de queijo, mas esta é a que eu mais gosto.

I watch all of the videos that you make and I am aleays amazed that you can flambé red wine when doing something lika a braise,stew etc. I live in Europe, Sweden to be specific and I have tried to light muy boiling hot red wine on fire multiple times. Does the US wine types have a higher alcohol percentage or what??
