They are judged on the basis of their knowledge in law, strong arguments, the way they address to judge etc and go through several rounds competing against each other. Many students participate in it and are held on a national level.
The panel won't be able understand the students that is why English is being used,because out of all those professors two of them are not Indians and ofcourse they won't understand Hindi or Indian regional language.
Your Honour is an American term, I think. And My Lord or Lordship are colonial. If you don't want to call the judged honourable (I don't see why you would want to not see that they are honourable), just refer to the Honourable Court. I can be wrong, you are free to correct me.
