I smoked a brisket a few years ago, I marinated it for 24 hrs then a slow low temp smoke at 170 or so for 15 hrs. Basted it about every 30 min with the marinate and had a stainless-steel pan with some water under the brisket, it turned out quite tasty and moist. I would like to try this method of smoking to see how well it would work. Cheese would be a fun test, thanks for the new smoking item tip and the drinks look good too.
Wireless thermometers are THE way to go. I started with a chugod set (looks identical to the one you have). I got tired of the wires from the probes and spent the money on a Meater true wireless set. Either way, they make those long, 12 hour brisket smokes simple. Plus, no more worries about X person wants rare, Y wants medium, Z wants well-done (and to get evicted).
This was a really fun video, all the way around ..nice seeing Jamie again. Packed with multiple useful products and a good time. That's what I call a successful day!

Oh wow I am interested in this! I actually asked for a sun oven for my birthday. I’m going to tell you what it hit me like a ton of bricks about up two months ago. I was like oh my goodness I have all these beans how in the heck am I going to cook them? There is no way anyone should even have beans in their dry storage without a sun oven. I mean I guess if you live in the forest and you’re good at chopping wood. Other than that it’s crazy madness. I don’t really know if you can cook beans? I saw on UA-cam somebody had some beans boiling in a sun oven. But I’m sure with overnight soaking you definitely could cook them in the sun oven? Also I live in the very bottom of South Carolina and I’m just going to start cooking my bread and other things in the sun oven. It is just flipping hot here to be heating up my house with a regular oven inside. Plus why not save us electricity money what the heck!

Burn unit for a week and a half. Skin grafts done. Brought him home today finally. Had a bit of a moment with the dressing on his leg from the donor site. Had to pause to dress again. Whew! It's been a long day.
You could also try an A-Maze-Ing Smoker. It kinda looks like a mouse maze punk smoker. Ha! (Jamie shows up RIGHT as the drinks are done! Too funny!) And she likes her Bourbon straight! Can't disagree with that!

So versatile.... from hard boiling eggs (without water), drying herbs or fruit, to cooking full meals, all without the use of anything else but the sun. Can also be done in the winter, as long as you start early enough in the colder states. I will definitely check out those products. Thanks for sharing sir!
You said you like pepper, so why are you using pre-ground pepper? Please buy a peppermill and grind fresh pepper on to your steak. The taste is sooo much better than pre-ground pepper.

My famous recipe is: worshester sauce (they do make a vegan one that's pretty darn close to Lee & Perrins) Montreal steak seasoning, garlic, diced onion and green pepper and salt and pepper to taste. Just put meat in bag, onion green pepper and seasoning; pour in about 1/2-1 cup of worshester sauce give the bag a shake and flip every hour in frig until you're ready to stick it on the grill. We put the onion and green pepper from marinade on top of meat about 3 minutes before we remove from grill as a topper. Give it a try sometime! I certainly plan on trying yours! Dales is our favorite! We had to get online for years. It’s now available at our grocery. My x discovered it while at graduate school in Birmingham Alabama.
That marinate is similar to the one I use. I also add a similar amount of Worcester sauce, liquid honey, and Red wine. I marinate for 1-2 days, and prior to cooking in oven (and an oven bag) I put a lamb and rosemary rub onto the beef
Mmmnnn…sounds so good! To save on the quantity of sauce required, you can put the item(s) being marinated in a baggie and carefully squeeze out the air. I save the clear veggie bags from the grocery store and they work well, but be careful of sharp bones in meat as the veggie bags tear easier than do storage bags.

Different, I spent alot of time watching Jamie teach Canning, now the role has changed a bit and watching you do the cooking. I like it all.

I smoke a lot of cheese. Definitely worth doing as is kosher salt and butter(if its cool enough outside)
