Tasty Mushroom Stroganoff, Quinoa & Veggies

  • Ingredients :
    3-5 Cloves of garlic
    3 Tbs Olive Oil
    1 Tsp Vinegar
    1 Tsp Nutmeg
    1/4 Tsp Pepper
    1 Vegetable Cube
    300 gm Chestnut Mushrooms
    200 ml Coconut Milk
    Method :
    - Peel, wash, crush and slice the garlic
    - Peel, wash and slice the red onion
    - Add 3 tbs Olive oil and heat it in a pan
    - Add the onion and sauté them, then add the garlic and keep stirring
    - Add 1 tsp of Nutmeg
    - Add the sliced chestnut mushrooms and keep stirring
    - Add 1 tsp of vinegar at high heat
    - Add the vegetable cube and keep stirring
    - Add the coconut milk and let it cook for about 5 minutes
    - Add 1/4 tsp of pepper and stir then cover to simmer and cook
    - Prepare some three colour Quinoa with some steamed vegetables to go with it and serve it hot !
    For the Quinoa :
    - You will need 1.5 cups of your choice of Quinoa
    - Boil as instructed; I boil for about 15 minutes
    - Let your water cover the quinoa or use 2-2.5 cups of water
    - Add 1 vegetable cube
    - When the water has evaporated use your stick or fork to check if the quinoa is cooked, add some more water and boil if you would like it much softer.
