Once you beef is trimmed, roll it in clingfilm and pop it in the freezer for an hour to firm up before slicing.
It's a thorough relief to see someone cook bare hands. Thx for giving the good example: clean and bare hands

I had Lamb Carpaccio at the Einer Bein restaurant in Reykjavík Iceland. It was delicious. The amazing part of the dish was how it was presented.
It was carefully laid out on the plate as fish scales. The entire plate including the edges. This was a 14 inch, 35.56cm plate mind you. It was the most beautiful presentation I have ever had. The rest of the meal was mashed potatoes and carrots wrapped in seaweed. A beautiful piece of Cod garnished with fried in butter scallion. The presentation was jaw dropping. The year 2016.
They are doing it in a Japanese style. Normally done with sashimi. Look up sashimi animal designs.

Reminds me of Poland where we love our Beef Tartar. Recently as Carpaccio(more italian style).
We mince/finely chop our beef mix with to to your liking but mostly salt, pepper, gherkins, onions, parsley, garlic and egg yolk with a piece of sourdough bread and
shot of vodka-Nom, nom, nom.
As mentioned you can alter recipe to ur likings.

Mmmmm.. loves me some good carpaccio! I worked at an Italian bistro years ago and ate it almost every shift as my meals were free. Paired it with a killer cold bean dish our chef made.

Honestly, I had it for the first time a few months ago not knowing what to expect and didn't like the texture personally
I had it twice a few weeks ago at two different restaurants and loved both.

If there is one thing I’ve learned from hours of recipe videos, cookbook reading, and working in a few restaurants myself it’s that if a recipe has less than 10 ingredients it’ll be the best thing on the menu if good quality stuff is used.
Don’t get me wrong, complex recipes can be beautiful but there is something about simple things like pasta aglia e olio where the ingredients are allowed to just be there and shine.
And as someone who went from a home cook to the assistant of the kitchen head in a month’s time (I started dish but began hopping on the line during rush periods and the head gave me the line cook spot when one didn’t show up) this was the biggest lesson that sparked my passion for cooking.
I was given free reign to make one dish and I made just a simple shrimp and grits and it was put on the menu for two weeks, and it was just a little quick recipe with just a handful of ingredients.
Sorry for the rant but your video just reminded me of that lesson and sense of accomplishment

I think it tenderizes it some more, and you want it pretty thin. I also like mine with some capers and very finely diced sweet onions. Garlic bread sticks on side. Love the addition of a citrus. A rosemary infused olive oil also tastes very good. Chef is going for simple and I am sure it is delicious just as he made it.
Yeah, that was a duh moment for myself. I probably would have used a meat pounder. When I saw the rolling pin I was like, "of course!" It's not going to beat the shit out of the meat, just press it flatter, gently.

It only can stay outer layers of the meat. That’s why doctor wouldn’t recommend you eat ground beef raw. It mixed the outer and inside meat together so it have a higher chance to get infected.

I find it’s much better when you put it on top of a toasted baguette with everything you had there but also drizzle a little balsamic vinegar on top as well. Very tasty dish

If you want flavor, an eye round will give you a great tasting carpaccio. Just make sure to freeze it a little bit, to make easier thin slices, and pound it a little bit to soften if needed

Novice question: how do you know whether the meat you're buying for this is good enough to use for this so you don't get sick?
Beef itself doesn't have any pathogens, you only have to worry about surface contamination from butchering and packaging. I wouldn't trust grocery store beef, as it's usually packaged in industrialized meat packing plants where the risk of a sick employee contaminating meat is higher. Any good butcher should be able to supply safe beef.
Get some from a real butcher. You know, not the one it the supermarket but an actual butcher shop. If you dont trust the meat they have you can always ask how theyve prepared it, i doubt that they won't show you. Or buy it online, small output farmers have quality beef.
He trimmed the outside and quite meticulously handled it afterwards. What is served is the inside which tends to have far less pathogens.

Had this from when I was young at our local hotels restaurant. Some of the same cheese and honey mellon. Tastes amazing.
Funny how I never realized it was raw meat, always compared it to sliced ham as it had a similar col and salty taste.
