Thanks for watching! I get a lot more energy in Summer and then a dip in energy in the Winter when we have little light, interestingly I also sleep much better in the Summer here 🙂
Thank you Lauren for an interesting video which I learned so much about Iceland this morning, I would imagine Summer for locals must be hard as you say if people take their holidays as the population is not big and while people from other countries could come and cover some jobs, there may be some jobs where it isn't possible. It was interesting to learn about Lupins and the impact they have had there and people's thoughts on them. As for rhubarb being plentiful there, I guess you have to be creative with it's use and ways to incorporate it into cooking, preserves, drinks and may be other undiscovered uses!
