The pressure plate on the right isn't working sometimes because it's triggering the armor stands in the waiting line. You can see that happening at 56:31 where some of the armor stands in the line are coming in already sat down. Also, in that same timestamp, that run ended early, the Golden Carrot armor stand animation was not in the last step when the game ended, so I'm not sure what triggered game ending there. The bugged armor stand from outside never came in either.
47:34 - A suggestion for the phone, maybe when the phone rings the Player has to press the button as well as stand on a pressure plate right in front of the phone at the same time. Until the phone call ends, and if they move off the pressure plate before the phone call ends, it's like they failed to press the button for the phone call, and get the penalty for that. This way it keeps the player standing for 3-6 seconds there while they panic about having lots of other things to do in the restaurant. Because right now once they press that button they just walk away from the phone straight away. This way it forces an inconvenience on the player that pushing a button on it's own just won't solve.
then you don't need the button at all and it required to majorly overhaul the redstone and/or the rails around there. requiring redstone changes too, but possibly less: having to press the button more than once, keeping a charge until the call is over, kinda like you could do stuff around a cable bound phone but you were limited by its cord. maybe with the right timing you'd get away with just pressing it twice while most attempts would need a third button press?

@MoonyFBM no glasses do not fix your eyes over time the body growing and/or training the muscles inside the eye may (!) fix the issue as well as developping the opposite problem thanks to age (but that usually only makes things more complicated). usually using glasses more than necessary worsens the issue (if it's muscle/growth related). glasses aren't like braces or medicine, they are more like wheel chairs, if you don't need them for a certain task you shouldn't use them, as overly using them atrophies the eye muscles. of course if you don't see properly at all without them you should use them as needed.
The rails could be brought in by a block at that specific point where the crafter is, because the wall there comes in by a block there. You don't need to be trying to suck dropped blocks out of the empty / solid space beneath the crafter. It will give you a tiny bit more room to work with which is probably all you need
2:03:50 if that happens, just put a block at head level in there like the entrance to Decked Out so they can't walk into the tunnel. Maybe glass all along the ceiling of the tunnel to block them from hopping out in there without suffocating them.
It would be interesting to record hermit voices leading up to the order (like "hmmm I think I'll have...") and have them actually say the order. Potentially a lot of work but could be a later add-on.
Fun idea, but really impractical. The heads are random and not associated to any specific identifying information. The easiest method to apply your idea would remove the random order…

After answering, the order will pop up above the phone, then they have to deposit it in a "pick up" box near the door or something. Probably too late into development for that, but it would give the phone a purpose.
My knowledge in java redstone and interactions isnt as high but in bedrock I would 1 of 2 solutions for this rat problem: 1- powder snow.. do silverfish not gall through them? 2- slime and piston over ice blocks. Launch them into the desired spot. If you raise the highway 2-3 blocks you could detect the silverfish arriving and still fit the block opening mechanism
For 1, unfortunately silverfish can just walk over powdered snow. He had actually built the roof of the restaurant with powdered snow in places for rats, only to find out afterwards it was pointless
How about keeping the button there for the phone. When the phone rings you NEED to press the button to not fail. But also whenever the phone rings you have the opportunity to do something more complex than pressing a button for a greater reward (which isn’t necessary)
Im soooo happy Tango has started doing more satisfactory. I love the game and his style. But I also love the variety of games with plate up and satisfactory to change it up from minecraft some. We need some rocket league though.

Haven't finished watching VOD yet, but at 1:23:00 you're having rat delivery issues. My suggestion for the solution: Replace rat delivery water stream with minecart delivery system. Can use the silence trick and it's much faster. Plus the rats can't fight it and it's easy to grab only 1 at a time. Could even add a random pulse to occasionally increase the number of rats.
Re exterminator: While dropping items on the ground may not generate rats, they'll still get picked up by the minecart; so it's not quite open slather on dropping stuff.

the patience slot can reach game over state in the time it takes for the armour stand to fall, get destroyed and sorted.
It makes me chuckle every time the upgrade noise confuses Tango. It happens almost every stream.
