      They all look delicious! I would only make the bread as I do not eat meat, eggs or dairy. However, I have taken some inspiration from the poor man’s one instead of hotdogs I would probably use mushrooms, beans or lentils with a bit of herbs unless we happened to have vegan hotdogs.
      But I wanted to say, please do not throw your veg peels,away. It was one of the things my grandmother taught me as a child. She was a child of the depression and she just always did it. Pop them in a container in the freezer until you have a good amount and then use it to make vegetable broth, along the lines of using beef or chicken bones to make bone broth. Those onion and potato skins are perfect, garlic ends and the paper, carrot peelings, tops and bottoms, celery strings and ends, swede, kale stems, the tough end of broccoli, leaves and the peelings from the broccoli stem (we use the peeled stems in our stirfries, it is so tasty), cauliflower ends and leaves although we chop the leaves and boil them with the cauliflower as they are edible and tasty. The ends from your mushrooms are a great addition too. If I have some dried mushrooms, I will throw one or two in the water too for extra depth. But really pretty much any veg skins, peels and endy bits will work. Even the silk and the corn cobs from corn on the cob is worth saving and freezing as it makes the most delicious broth. Save the stems of any fresh herbs and excess herbs you might throw away because they have dark marks or have wilted etc. So then when you are ready to make the veg broth/stock, take the container out of the freezer and either shove it all in or puck out the bits you want to add for that particular broth and cover with water, add a couple peppercorns, a bay leaf or two and if you like it to have a bit of heat, some chilli flakes. Turn the heat on, cover and bring to the boil. Reduce the heat and simmer gently until everything is cooked through, allow to cool and then pour through a strainer and it is done. Alternatively the veg can go into a little oil to fry for a bit before adding the water and carry in the rest of the way. You can add salt if you wish during the cooking, but I keep mine salt free and add if necessary to whatever I am making. If I am not using the broth/stock right away, I freeze some for making soup or to cook rice and I pour some in ice cube trays to use when I only need a little broth to make something. You can also add meat bones raw or roasted with the veg if you are a meat eater, as the veg add extra flavor and extra nutrition to the broth.

      the rescipe can be used with french cut green beans too also the reason it said the lbs for bag so that they could get several meals from the bag you might check the book company and or find her recipe or her email or contact her to tell her so they can correct the typo from video

    Taking a stick of butter and rubbing it over the tops of the loaves when they come out of the oven will soften the crust. 😊

      What she said☝️ also once they've cooled awhile but not completely,putting the loves in an air tight container or calling bag and let it get all steamy will soften the crust up and make the whole loaf soft...good job!

      Yea to each their own, I prefer a hard crust, even to the point of being a cracker. I like the mix of the crust with the soft bread. It's like having granola in your parfait or yogurt, the combination of crunchy with soft foods.

    Clara’s videos are some of the best. My favorite story that she told was the one of about when her neighbor came with her shopping bag to help herself in Clara’s garden and Clara asked her what she was up to. She would have been fun to have as a neighbor.

    That's the way I learned to make bread. My grandmother wouldn't let us use the machines until we had learned to do it by hand. I now have the same rule with my kids. My son was really struggling with his fine motor skills. He was in occupational therapy, and suddenly he was having all these breakthroughs. His OT asked what we had changed at home, and he talked about how he'd learned to bake bread. The OT was so excited.

    How Clara cut her potatoes is how I was taught by my grandmother and mother to cut them. Then we would cube/cut them right over the pot.

      My mom does this too! She never cuts potatoes on a cutting board. It’s how her grandma taught her to do it.

      I still dice my tators like that to this day. I add my onions when the tators are 3/4 of the way done because I don't like burnt onion's.

      And onions too... well really anything. I think it was because knives were pretty dull and also cutting this way gets everything in the pot.

    You know why I love this? Every time I watch a video about cooking which is mostly what I watch, everyone is always using fancy equipment and machines. I taught myself to cook in 80’s when I was a kid. I have always used my hands and fork or spoon and bowl. I don’t have a mixer. That’s why this video resonates with me and people like me that don’t have the money for all the fancy equipment. It also creates this enjoyable experience with making things in kitchen because you put yourself into it fully and put actual effort into what you make which creates a pride and sense of accomplishment when complete. I really hope you do more videos like this particularly more videos without fancy machines. Very nice. 👍

      You might enjoy the show Struggle Meals. I believe they’re on UA-cam (they definitely have videos on Facebook). They don’t use fancy equipment because their cooking is designed for people with limited means.

    I was just telling my friend the other day how I remember 30 yrs ago which isn’t even that long ago, that my grandmother and I would go to the store and wait on line for a loaf of bread back in Russia and if they were out, then we went home without one. Every generation now is getting more and more spoiled so I loved that u made this video and hope u make more of her recipes

    When Clara was living she would add you to her actual Facebook. I was blessed to have spoken to her a few times. It was sad when she passed but hers was a life well lived. When the pandemic started people started to be drawn to her wisdom again.

      Clara was a wonderful woman who has left an enduring legacy of knowledge and wisdom. She reminded me of my own grandmother who passed in 1972 at 80 years old. I still remember and use her recipes. We will need the gifts of people like Clara more and more in the coming dark days.

    This brought me back to my childhood. I was born during the depression (preWW2) and my mom cooked this way. We would have toast for breakfast and many one pot potato dishes. She would fry potatoes and onions and whip up an egg and pour it over, put the cover on till the egg was cooked. Simple dishes without very many ingredients. Nothing out of a box. Great video!

      When I was a kid, my mom used to make us potatoes and egg tacos, so yummy! I still make it but we it eat for breakfast with some salsa. 😀

      My mom was born in 1945 so my grandparents lived the depression. I was born in 1972 and was taught depression era cooking by my grandma. My mom did too just not as much. I love that kind of comfort type cooking. Back then it was survival now its comforting interesting how things change but stay the same.

    I’ve watched some of her videos before, and she reminded me of my Mom. I’m 60 this year, and so my Mom grew up on a rural farm during the depression. They made everything from scratch, churning butter, growing veg, meat, chicken etc. My Mom passed away 3 years ago, and I miss her so much and hearing about life on the farm! 😌

    I loved watching you AND Clara make these recipes! Clara showed us how simple, inexpensive ingredients could nourish a family during lean times. The story of her picking dandelion leaves on her way home from school for her family's salad comes often to my mind. My grandma used to do that as well. I'm glad Clara had a good, long life and is now with her beloved husband.

    Oh my, I'm sure as others have experienced this reminds me so much of my Oma. Due to life circumstances I was raised by my depression ages grandma and she mixed everything by hand, it was amazing to watch her "whip" ingredients by hand. She passed February 2021 and I miss her a ton.

    When doing eggdrop soup, stir the liquid and drizzle the eggs un little streams. Keep stirring, the eggs act like little noodles. Texture is fine and soft. I love Clara.

    I haven’t watched the video yet but saw the thumbnail and immediately clicked. I absolutely love Clara! When I found out she died several years ago, I cried. She seemed like such a wonderful lady, and I loved all her stories. She has some great recipes in her book as well. I have yet to try the Stale Ham Sandwich though. 😃

      I know what you mean. When I found her channel I fell in love with her right away. She was a precious lady. Beautiful inside and out. I cried too when I found out she passed. I loved her stories as well.

    We still eat macaroni and peas but make it a little different, in a saucepan cook chopped onion in oil, add 1 8oz can tomato sauce salt and pepper cook about 5 min, now add .can of peas juice and all, cover and simmer on low 20 min, meanwhile cook you favorite small pasta, when cooked drain pasta add pasta and sauce together and top with your cheese. We love this with buttered bread. Still one of my comfort foods. My nana cooked this for us. She also made potato and egg omelets we ate on Italian bread, peppers and eggs the same way, Macaroni and broccoli or
    cauliflower. Try this recipe and see if you like it.

    I’ve watched her videos, she was such a sweet lady, the lady across the street from me is 83, Italian, she told me about the pasta with Peas, and the poor man’s supper, her daughters, say Ma, make the potatoes and hotdogs, or the pasta with peas. Only the hotdog one, she uses a small can of diced tomatoes. Great video this teaches people that you don’t need a lot to have a taste meal. Thanks for sharing! 👍❤️

    I’ve watched all Clara’s episodes on UA-cam and bought her cookbook as well. She reminded me of my grandma and mother. So glad you made some of her recipes! Definitely going to try the bread and poor man’s dinner. Interesting that all of her recipes included the potato in addition to onion, helped bulk it up and add calories , plus they were cheap and many folks grew their own groceries during the depression ( at least my great& grandparents did)

    When I learned how to make bread, I did not have a mixer, esp not one with a dough hook. then when I moved away from home for the first time, I made bread once a week and it was always by hand. There isn't even an age gap for me to say that I learned all this before there were the tools for it available, cuz you and I are only about 6mos apart in age, Kimmy! Just coming from a very frugal house that was used to learning how to go old school, and learning to do the basics with as little as possible so you'll ALWAYS be able to do it regardless of where you are in life and what you have available to you.

    I would to see more videos of great depression I remember growing up we didn't have much my mom had to raise 8 kids on her own we are Hispanic so she cooked alot of soups, chilies and home made tortillas corn and flour just food her mom showed her and my mom did everything by hand.

      lol back in the 70's I made my first loaf of bread as a new bride. We used it for about 20 odd years as a door stop. 0.0 really it was like a bloody brick.

    My family makes a version of the poor man's meal, but instead of using hot dogs we use kielbasa, and add in zucchini and squash. I have never made it using pasta sauce, but we usually add ketchup so I imagine it would have a similar flavor. I have also never thought of adding cheese. Great video!

    Clara is a treasure! I watch her videos and other videos about the Great Depression. My parents and in-laws were born during that time and the thriftiness is ingrained in them. I believe it’s smart to learn these ways as our country could be headed that way.

    My Nana was born in 1913. My Mom was born in 1936. I was born in 1955. Nana could stretch a meatloaf to feed her husband, four children and herself with leftovers for the next day. Mom doesn't know what she did but everything she made was from scratch and it tasted delicious. I think, as in this video, that she probably used potatoes and onions to stretch foods. She passed away six weeks shy of her 100th birthday and was an amazing woman like Clara. Thanks for taking the time to make these recipes today. I've ordered my own copy of Clara's Kitchen.

    My stepmother used to make homemade egg drop soup. She didn't pour the eggs straight in. Instead she poured them thru a sieve, stirring the soup the whole time to dispurse the egg. You would have to stir the eggs in the sieve a bit to make sure all of the eggs got thru. The eggs would come out in strings, like you would see at a restaurant. Excellent!!
    The pasta and peas dish? It would be great with a can or two of tuna, instead of the sauce.
    As for Mama's Cake. When I was little my job was to grease the pans with Crisco. I used my fingers, not some bag, which made sure that it was well coated. Then I'd throw some flour in the pan, twirl the pan some, letting it spread around using gravity, coating the grease. That would make sure that the cake didn't stick to the bottom.

      My Mom lived through the depression - also Italian - she would make us pasta and peas. That was it - Pasta - but she used frozen peas. Butter and parmesan cheese. No sauce. We loved it. Thanks for bringing back that memory!

    My grandmother used to make the poor man's dinner, but she called it hotdog hash. She did not use any sauce and threw in any leftover veggies. So delicious!!

    I watched her and have the cookbook! Wonderful. I leave out the sauce in the poor man's meal and we usually have Turkey smoked sausage. Also good with just scrambled eggs in it for especially cheap.

    My Grandma cut that way too and I learned the technique and use it sometimes but I like a cutting board!!! Oh, and the point of the pan of water in the oven for the bread is to help create that crusty crust!!

    I love depression Era cooking, they were so creative because they had to be. I remember my Dad telling me about breakfast of toast and coffee when he was a little boy because the coffee helped stretch the milk. I can't imagine being 5 or 6 drinking coffee but thats what my grandmother gave them

    I've done a few of Clara's dishes over the years...love her videos.
    Whisk the eggs into the soup before dropping the whole eggs in rather than letting them be just poured in and left, and make sure your soup is at a hard simmer not a boil. Also, just leave that bay leaf whole, they never soften enough even when crumbled and you can just take the leaf out when your serve.
    Clara's bread...if you want the crust soft either rub the loaves with some butter while they're hot, or just put a towel over the cooling loaves and it will steam and soften the crust nicely ( I tip my bread out of the pans then cover with a towel to cool completely).

    My great grandmother woke up at 4 am every Sunday and made 10 loaves of bread for the week. Every week. I like to think that is where I got my love of bread and bread making from. ♥️ Both my grandmothers cut that way and they didn't use peelers! I could never master that lol

      In the South it was biscuits. I had an aunt who had 8 kids so family of 10 and she made biscuits three times a day. When they became empty nesters she cut back to once a day. They all worked hard farming and all those bellies needed filling.

    I went through a bad financial situation with a small child. I was so depressed & cried nightly, i found Clara’s videos & watched them over & over & over till I fell asleep listening to her & it made me thankful that my situation wasn’t like the Great Depression & I tried some of the food, I add baked beans to the poor man’s meal & top with cheese & toast & my daughter loved it. She inspired me to think outside of the box & make older style of meals

    During the Depression, my dad's mother would make what they called Peas 'n Breakfast. (I have no idea why they called it this--maybe they ate it for breakfast? They lived and worked on a ranch, and big breakfasts were a necessity because they worked really hard all day.) It was cheap and filling. They would dig new potatoes, boil them with canned peas and a little onion, drain them, and make a cream sauce with flour and milk. It's pretty good, if a little bland. It's better if you add butter and garlic, I think. The new potatoes are so delicate and creamy!

    Rub the tops with butter and lay the loaves on their side to cut slices. My grandmother lived through the depression and taught me to cook and bake the way she was, the greatest gift she ever gave me was her knowledge.

    I love Clara. She reminds me of my grandmother, she would cut things the same way. My parents were born during the depression. My grandfathers always had work, so they were lucky.

      My Mom cut with her hands too and I have done so as well. I've only used a cutting board when I've had a ton of things to chop or cut up.

    I watch Clara's videos & just love them & her stories. Today, all those foods we are told NOT TO EAT because of the fat, salt, ect. But, with the cost of food???? I say....eat cheap!!! Love & Blessings from Fla.

    I adore Clara I’ve watched many UA-cam videos of her recipes. She reminds me of my great grandma no modern convinces! It’s amazing how they worked that hard every day and usually wearing a dress. People these days are inconsistent if they have to pull their food processor out of the cupboard 🙃 I’m so glad you did this video, I appreciate you so much too.😍

    My mom had a similar cake recipe. A cup of this a little of that. We tried to get her to give us the recipe but she always said she didn't remember it. I think it was really because she used what she had and there was no recipe. But because we hardly ever had any sweets, it was a real treat to us😉

    I love this video for so many reasons but it’s nice to see food from the great depression like back when they didn’t have anything and I found Clara’s UA-cam videos and I’m gonna go back and watch those just because I think it’s really need to see how they cooked back then versus how we cook now

    Kimmy,I appreciate the old ways,traditions of our elders.Please continue to bring recipes from days gone by.As well as your series on making food stretch,preparing for emergencies,etc.My husband just retired and we are now on a limited budget,it is just the two of us at home now.I too share the Irish/Italian b lord line and have difficulty cooking for two.Thankfully with your help I have learned to freeze big batch recipes,lol.And truly,just seeing your bright eyes and glow from the Holy Spirit blesses me so you could just sit and recite the alphabet.🤣Love you.🥰🙏❣️

    Putting moisture in the oven causes the crust to be crusty. You can also add a few ice cubes at the beginning of the bake. This is how artisan bread gets it crust.

    My grandma had a big metal pail for bread making with a hand crank on the top that would turn the mixing arm. It was hard work but so worth it. She made the best bread. I miss her every day.

    You could do 1 can peas 1 can sweetcorn, would be more colourful and another flavor, the potato and sausage looked so good a great lunch.

    Oh how fun that was! I have been on the same thoughts of late. My grandma was the best bread maker. The smell of daily breads, rolls and desserts were always present. I actually found it hard to sleep there because i could still smell all of that comforting food! Love to see more of these videos Kimmy

    I don’t have a mixer, and I don’t buy bread anymore, so every week, two times per week, I bake bread and do everything by hand. I enjoy doing that way.

    I think this is so ingenious to do at this time! Many people are struggling with stretching food as far as they can. Rethinking gardening, raising their own food including meat! So I think this is great knowledge to have. Plus I just find this so interesting! Food back then may not have looked as pretty as it does now. But it served a purpose...it was meant for sustenance. I hope you do more!😋

    My auntie is South African and she also doesn’t use a cutting board but cuts up in her hands. And she taught me how to do it and so now I can do it both ways. Interesting how they are from opposite sides of the world but use the same techniques.

    I made 6 loaves of bread at a time when I was 15 years old. I sold them door to door and never came home with anything. I did it all by hand. I remember having blisters on my hands the first week. I didn't appreciate it at the time, but I got the flour right from the flour mill at the time! It would have been 1981. Fresh bread with butter us the best!

    I love her videos. I make something like her poor man meal and it is so quick. I use the Heritage Farms smoked sausage (Kroger brand because is it cheap-sometimes $1 each). I cut it up in slices and then cut them in half and cook with one chopped onion. I use potatoes that I had canned and then slice them up and after they are warmed through, I get a can of green beans and after I drain them, I add them on top and then just mix and cook until all is warmed through. That bread looks amazing but I sure don't need 6 loaves at once.

      I do the same. Depending on what meal of the day and what sausage I have I use different veggies with the potatoes and onions. T
      Just this morning I used Cajun seasoned sausage and red bell pepper with the potatoes and onions with scrambled eggs on the side. Kielbasa or leftover brats are good with cabbage added. Italian sausage is also good with bell peppers.
