Dreamy Creamy Tomato Basil Soup

  • You’ve got to try this absolutely delicious tomato basil soup. I made it up on the fly, using ingredients I had on hand and the results are soooooo good. If I were to make it again there are just a couple of tweaks I would make as seen in the recipe below: add more carrots to increase sweetness and add miso paste to add saltiness. You can skip the cashews if you want less fat (maybe add a few more white beans instead), or you can add more if you want more creamy indulgence.
    Ingredients for Tomato Basil Soup:
    2 cups onion
    1 cup celery
    3 cups shredded carrots (instead of the 1 cup I used in the recipe - this will increase sweetness and reduce the need for added sweetener)
    1T garlic (maybe a bit more)
    2T tomato paste
    2 cups water
    56oz tomatoes with basil, oregano, garlic
    2t bouillon
    1 cup white beans
    1/4 cup cashews
    1 cup fresh basil leaves
    1t salt (or to taste)
    1/2 T miso paste
    1/4 cup nutritional yeast
    Add sweetener to taste (I used maple syrup, but with the extra carrots may not need it)
    I served this delicious tomato basil soup with homemade wholewheat croutons and enjoyed every single bite!

      Thanks Liz! I hope you didn't notice too much of the mess! As you could probably tell, this was a very spur of the moment video - making it up as I went along. The soup turned out really well though!
