While the above ground and below ground rules are a good starting pace for newbies, it isn't a hard rule. There are Veggies that grow above ground, that are high in carbs such as peas, beans, etc. and there are root veggies that are low in carbs such as Radishes and Jicama.
Made a creamy fish pie mix and topped it with lightly steamed grated cauliflower and then added cheese. Grilled it until bubbly. Makes a tasty substitute for high carb mashed potatoes.

Can’t lift due to injuries, so just cutting off some fat for now. Then I very slowly start to sprinkle carbs in once I feel I’m at the ideal weight
Kinda surprised squash made the list, but I do eat zoodles and shrimp after resistance training-to spike my insulin. If you're gonna include zucchini, may as well include spaghetti squash. I also have garlic, onions and tomatoes-usually on salads. Naturally, I keep the grams of carbs down, though. Kale and spinach are kind of pointless to eat raw, as they chelate minerals. I do like spinach steamed with butter, though. Oh yeah: seaweed, and if you want to replace potatoes, a little radish (in various forms) works well. Also missing: bell peppers-keep them green to avoid carb creep. In fact, transitioning to a low-carb diet from a keto diet would probably include a lot more garlic, onions, peppers and tomatoes. From the list, my tops: asparagus. I could probably have it with every meal. In fact, just about every meal I eat has that, broccoli, cauliflower or zoodles. I used to eat a lot more spinach, but I'm pretty high iron, and I'm not giving up my beef and lamb.

i don't know why i haven't made pigs in a blanket yet...my grandmother used to make them all the time. The thought just came to me. She used rice and pork but i'm sure i could substitute cauliflower for the rice.
I've read that spinach has high oxalates and should only be consumed cooked and not raw in salads otherwise it jeopardizes staying in keto. Is that true? Also beyond all these veggies, isn't serving size the key when keeping total carbs below 20 grams although I've also read that 50 grams daily carb is the higher end of keto?! Pls advise!

I use kohlrabi instead of potatoes. Even zappa Tuscany soup, I use kohlrabi. Pill, slice as potato....it's delicious. I let to try to my husband without tell him about kohlrabi, he didn't taste any different

If you have thyroid issues, be mindful of how much broccoli, cauliflower, cabbage and Brussel sprouts you eat. Speaking from experience. Look up goitrogenic foods.

As a quick snack I make Avocado Crackers. Slice up some Avocado, and put it on a slice of cheddar cheese (meaning the cheese is the cracker).. top with a smidge of sea salt. I gave some to my daughter to "try" and she said "OMG! this is food crack!"

I love all these - but after giving up spuds and sweet spuds, I eat one meal a day and my go too is butternut squash - is this ok once a day and I have about 250 gram of the beauties. 250g butternut squash is likely closer to 25g net carbs as it is 10g net carbs per 100g serving. If you're happy with the progress you're seeing, there's no need to give them up. If you're stalled or not seeing the progress you'd like, consider swapping them out for a lower carb veggie, like one of these top 10.

I think it would be impossible for me to do keto as I eat cauliflower rice and grated cabbage twice per day, I have a decent sized portion around 500g each serving and according to my food app puts these 2 meals alone at 27 g of carbs each so 54 g of carbs eating so called keto friendly vegetables mmm!
What about juicing is that ok for keto I did keto for 3 months for my bodybuilding cut I got super lean and cut but I never had veggies now I am Into juicing a lot.
It can depend on what you're putting into the juices and weather you are including the pulp/fiber or not. Most juicing recipes are going to be too high carb for keto though and it would be important to think of those as a small part of your diet as there is very little protein in fruit/veggie juices.
I agree! I just watched a video that said keep your veggies raw or lightly steamed or it can raise your insulin but hmmm they also said to add raw spinach to low carb smoothies

disappointed I didn't see any kind of mushroom on this list. I think basic white mushrooms are less than 2g of net carbs per 100g serving. plus they add great flavor especially to beef/venison dishes

Me to, I thought I'd miss veggies, instead, I have no IBS, gas or bloating and minimal poop!
Every time I add veggies back, I get thrown out of ketosis. I guess it is mainly carnivore for me, at least until I get to my goal weight.

I think it would be impossible for me to do keto as I eat cauliflower rice and grated cabbage twice per day, I have a decent sized portion around 500g each serving and according to my food app puts these 2 meals alone at 27 g of carbs each so 54 g of carbs eating so called keto friendly vegetables mmm!

It can depend on what you're putting into the juices and weather you are including the pulp/fiber or not. Most juicing recipes are going to be too high carb for keto though and it would be important to think of those as a small part of your diet as there is very little protein in fruit/veggie juices.

Not sure it's such a good idea to eat green veggies raw, cooking them significantly reduces the amount of oxalate.
I agree! I just watched a video that said keep your veggies raw or lightly steamed or it can raise your insulin but hmmm they also said to add raw spinach to low carb smoothies

disappointed I didn't see any kind of mushroom on this list. I think basic white mushrooms are less than 2g of net carbs per 100g serving. plus they add great flavor especially to beef/venison dishes
These were more of a side-dish, hence no olives, or condiments suggested.
I am Keto and I eat mushrooms nearly every day.

Zucchini, tomato and avocado are technically fruit, but typically used as vegetables in cooking.
