My first time using semolina (fine). For every other semolina recipe online, they advise me to use different amounts of yeast, or to pull out a stand mixer, or to knead the dough for one hour like I'm a European grandmother. I'm too lazy and stupid for that. The night before, I sauteed onion/garlic, and added overripe tomatoes, salty canned chicken I inherited, canned favas I inherited, rosemary (fresh and dry), black pepper, and feta cheese. In the morning, I gently warmed and mashed it all, and then I used the same concept (half the dough) - but I added a teaspoon of baking powder. Getting the mozz to melt outside of a broiler was a little tricky, but the result was delicious. Finally! Thank you! This basic format was all I needed.
I hear you :) Sometimes it's better to keep it simple, ain't that true? I've been making this semolina "pancake", or whatever I should call it, this way for years. Learned this recipe from my father, just made a few small mods. It always brings back the memories and my own kids enjoy it too :) Glad that you liked the format :)
