    hey quick tip mate : if you put all your veggies et aromatics in cold water and then turn on the gas, the flavours will infuse way better in the water and ultimately the pork

    Yess his recipe is really good ! I am Korean and when my mom makes she always puts some Soju to get rid of bad smell ! He is a good chef !!

    I've been using this recipe on more than pork belly. I've used it on pork shoulder butt, pork ribs, etc. I've been shamelessly feasting. I love making lettuce wraps, but when I feel like bread, I get those low carb tortillas and make a wrap with kimchi and some mayo and pickled veggies. SOOOO good. Edit: I meant to mention that I never used to be able to eat much pork unless I got it from a special supplier that fed the pigs a specific diet. Pork always left me feeling ill. But now, with this preparation and eating it with kimchi, I'm fine! My body doesn't struggle to process it, which is a huge blessing since beef prices have been outrageous recently.

      His recipe is totally incomplete. It’s missing the unfermented radish kimchi, pickled Napa cabbage, lettuce leaves, raw oysters, garlic slices, korean green peppers, shrimp paste, ssamjang, chojang, and rice/radish papers,

    Such a delicious dish. I use hazelnut coffee and like to mix oysters in with the kimchi. Also I need some pepper baby salted shrimp with pickled cabbage leaves to make tasty baby wraps. So good just the way you ate it too.

      I think this won’t be even close to what Korean people would do, but me as a butcher, would probably use something like Sirloin, it has the fatty part and still some very nice meat which (if cooked the right way) stays chewy, hope it will work out! Let me know!
