honestly it depends, each kitchen has it's own mise's, but generally it's just a lot of cleaning and a lot of prepping for each dish, the basic's basic is to wash yourself and where you are working, don't mix up foods, that goes as well for your equipment, your knifes and cutting tables, each time you switch to another food wash them, and the rest is basically what you are taught in each kitchen you'll work
Well, every kitchen has it's own features, but hey, you can learn the basics from these videos! Like how to use the stove or how to get ready for the day. That's what i learned atleast
