I think the hood infront of the ventilation is too short. You can see the tickets getting a constant flow of air as the vents are sucking in what they are supposed to. Do you have food coming back cold or not quite to temp? Those meals sat in the hot window/pass are getting Air Conditioned. Pasta will die very quickly.
