How I Make Egg Bagels!

  • In a stand mixer with a dough hook combine and mix for 15 min:
    1tbsp sugar
    1tbsp salt
    1tsp instant yeast
    1/2 tsp turmeric
    4c flour
    1.25C + 2 egg yolks
    Split into 8 equalized balls, push thumb through the middle and form a bagel shape, stretching the inner circle with your two index fingers.
    Put on a sheet tray lined with parchment and cover with plastic, let rise in the fridge overnight.
    The next day, preheat the oven to 420º
    Fill a 12” skillet with 2” of water and a tablespoon of honey, bring to a boil - cook each side of the bagel in the water for 20-30 seconds transfer back to the sheet tray, when they’re all boiled put them in the oven, lower the heat to 420º and cook for 15min or until golden brown.

    Seriously Frankie, you have become a household name during the pandemic. My son came home from college and was like who is this Frankie?? I'm a Mom of 6 and use so many of your tips and recipes. My 6 year old even made a packet drawer. Stop by when on Long Island !!
    The question.....any bagels I can make that don't have to proof overnight?

    You are AWESOME, I love struggle meals. For so long I've looked for a cooking show that was simple with affordable ingredients.     Finally decided to look up the guy behind struggle meals. You inspired me to cook. Haven't tried anything crazy yet, but I've been cooking dinner every now and then. And I've been cooking a good, hearty breakfast for mom and myself every morning for a few months now. It's definitely helped to keep the spirits up during isolation.     Just made these with 1 1/3 cup of water and no egg to keep it vegan, and I was low on time so they were only in the fridge for about 11 hours. Also baked them in my large toaster oven 4 at a time and they still came out great. Thanks Frankie

    Made the regular version of these from your IG post, they were delicious, going to make another batch this weekend....I dont have a stand mixer so I did it by hand, wasnt to bad kneading for 15 minutes, & yes I put a timer on, lol

    I'm on a new antidepressant and put three whole eggs in the dough. Also I only had active dry yeast. If it doesn't work out I'll know who to blame.

    Question is there a way I can make it work with dry yeast? Should I just activate it and then add it?

      Yes I used a heaping teaspoon (active dry yeast contains more dead yeast than instant) and mixed it with the water before i added it so it had a chance to activate. Turned out fine! Make sure the water is warm

    If that instant yeast is like the one sold in bulk at my local health food store, I can vouch it's fine after a few years, stored in the fridge, but maybe go a little heavy on the measurements if it's a couple years old. It does like to be hydrated first though.

    Just made these and I think I might have used too much flour. I also didn’t leave them in the fridge overnight because I wanted to enjoy them the same day so I let them rise on the kitchen counter. The texture came out so weird not like a bagel whatsoever I wonder if it’s because I used too much flour or maybe because I didn’t let it sit overnight
