I just looked at the video you watched - comfrey? I actually filmed that at the end of summer - just wasn’t ready to launch into UA-cam at that point! So no my winter isn’t quite like that!!
If I’ve let it go too far and there are viable seeds I put that where I’d like comfrey to grow - learnt that lesson early on. I try to cut for mulch when flowers are just starting or just before- hard to do because they are beautiful and the bees love them. You also get more cuts during the season this way. What about the seeds in the flowers?do they sprout up everywhere you put the mulch?

It’s also fine to use cuttings with seeds in a hot compost. The seeds will be destroyed and the green leaves help make the compost hot quickly
