    Heather, I’ve been canning for over 50 years. Never have I seen such a detailed tutorial on canning. In my 70’s and learned so much from you. You are a born educator. It’s no wonder you homeschool. Thank you. You’re the best !

    As I await for my All American to arrive and get the chance to begin canning soon, I've been watching so many videos and reading so many books on canning. You are the ONLY one to teach us these very important cleaning steps and tips for the end process of canning that I've seen...     Glad to know I’m not the only one who works late at night. I’m waiting for my canner to lose pressure so I can take my potatoes out and go to bed... it’s 2am! Too much stuff happens in our kitchen throughout the day that I cannot can by day.

      Question, I have also see some homestead leave the pressure canning overnight and take the product out the next morning, is that good or bad?

      @@lovelymillie1967 That is what we did for years on our farm growing up and never a problem...definitely wash off outside of jars in case any juices hanging around.

    That's pretty much how I do it too. Except I typically don't have to dry the jars because they're already dry by the time I finish, I don't know if it's because of the climate I live in or what. Anyway it's nice to be encouraged that I'm doing it well.

    The one thing that I learned when I started canning was that there was a lot more to it then what I thought. The preparation the canning process and then the cleaning and storing afterwards when they had set for 12 to 24 hours. Before I started canning I watched many videos from you and other canners and learned the entire process. Also, I took time to read books on the canning process and then began to can slowly. This is something that I have absolutely gained a great respect for and appreciate. I have now been canning for a year now. Knowing what I do now has helped us so much within this last year and now knowing that I can take care of my family during these crazy times. I have always worked but last year I had an infected hernia mesh July 1st, and my body is still not wanting to heal like it should. What I have learned by doing this is that while my wonderful husband is out working that I still can provide for my family. Thank you for sharing your knowledge!

    Great tutorial. As a new canner that has done already tons of multiple different jars daily, does this exact same thing! :) 3:30 am waiting for canner to cool down, did sausage, pork, butternut squash and sweet potatoes today :) then bed lol.

    Great, thorough video! I think I'll also put my washed and hand-dried rings in my dehydrator for awhile to be sure they're completely dry before storing them, since I live in an area that can be quite humid :-)

    I’m do it just like you do. As a matter of fact I never knew to wash the jars until I saw you do it on a video a while ago and realized what a good idea that was so now I always do it. I also learned the hard way to dry my rings and not to put them in the dishwasher. Lol

    I'm so glad I watched this video! I made a batch of jam a few weeks ago but had no idea you needed to do this. Boy am I glad I did. Two of my jars would have failed for sure. I couldn't get the rings off. Thank you for this important tutorial. Love your videos!

    Hello Heather, I have been following your canning journey from the beginning! You are a great teacher and I really luv your passion for detail and food safety. I have been a water bath canner for years but never ventured into the pressure canning world out of fear. I am finally going to take the plunge. I am going to start with potatoes... of all things... now I just need to research the best potato for the job. When it comes to rings, I always wash, towel dry and then I place them in a warm oven to dry thoroughly. I know that sounds a bit excessive but the rings have so many nooks and crannies, I like to make certain they are entirely dry as they rust so easily. Thank you so much for sharing all of your amazing experience and knowledge.... you are the BEST on UA-cam when it comes to canning... hands down. Well done! Take care. ~kendra

    I have been canning forever and never was taught to clean my jars after the canning process so thoroughly. I do a cursory wet cloth to go over the the tops and threads but never like this. You certainly have taught an older dog new tricks. ❤️❤️❤️ I definitely will be doing what you do. That is my new me!!!!

    Divine post canning lesson. I made my first dozen jars of holiday beets and wished that I knew to give them a soapy hot water cleanup especially around the lid. My wife loves your channel SUBSCRIBED! ..:-)

    I've water bathed since i was 19. I have used a small pressure cooker to make meals. I just got an all american and I'm going to try canning. Thanks for all your info.

    I don't store my jars with the rings on either and it's a good thing because as I inspect my jars of food I found a jar of bbq sauce that had popped its seal. RIP to my bbq sauce. 🥺

    Thank you for this! After processing my first ever green beans, I DID just "wipe down" the outside of the jars. But seeing this video, I went and checked on my jars and, sure enough, there was some "sticky" on a few. I ended up doing the washing like you showed. Thank you! I want to make sure I get EVERYTHING right.

      😆👍🏻 you know, with all the love and hard work and money not to mention the time factor spent on canning, you hate to make it to the finish line only to have your lids fail or jars to become moldy over time because you simply didnt wash up the jar after processing. for me it's worth the extra step. and like everything, once you get going, it doesnt take long! a few extra minutes!😁👍🏻

    Vinegar will only work with dawn or other detergents. If you are using true soap, use the vinegar after the soap. Together can leave a greasy feel to your jars

      Yes, you are so right. If vinegar is mixed with soap(ex. Dr. Bronner’s liquid castile soap), the soap becomes unsaponified & reverts back to oil. You can use vinegar with a detergent(ex. Dr. Bronner’s Sal’s Suds) though. 1/2 tsp Sal’s Suds, 1 cup water, 1 cup vinegar, & 10-20 drops of orange essential oil makes a great cleaning spray. It works really well on greasy residues. Lately I have been skipping the essential oil and I have been using orange vinegar instead. I place orange peels in a jar, cover with vinegar, top with a bit of waxed paper (to keep the acidic vinegar off of the metal lid), & screw the lid on. After 4 weeks, I drain off the vinegar & use it in my cleaning spray.

    What do you do if the head space is not right or you see bubbles in your jar? Newbie here and very nervous about canning. So far I have done pickles and peaches. You explain things that are not talked about elsewhere! It’s needed for those of us who are new to the canning world. Thank you!

      if the headspace is REALLY BAD, for instance i had a massive evacuation, i put that in my fridge and use right away. If the headspace is off just by a little bit, input those in the front of my pantry so those jars are used up first. 🥰

    You do great video's of what to do. I watch Jean Truelove quilting video's, she is a sweet lady going through so much. They downsized into a smaller home. She had so much beautiful things she collected over the years, beautiful collection of tea cups and that sort. She had to give much away. She is in her 60's and has 10 all grown children, the last lives with her, he is autistic, a very nice young man. They moved into her one son's home a smaller home. She had a big home she moved from. Well, anyhow the house she moved into was raised 5 ft years ago by her son, but they live near a creek and with a flood of rain it came up to her porch all around. I felt so bad for her because they got water in a beautiful gameroom before where she had quilts hung. She had to get them out of there. I was thinking of you when you had all that water months back and now have chickens there. I would be worried. Jean had to leave and go to her one son's home her husband and Maxwell and another son stayed. She was so upset because she has a beautiful sewing room and machines and so much fabric there. No water came in, but her sons have a business and they will jack the house up again I guess its complicated, but they want it done for her. She said leaving there was 4 ways out, but only one way was able to be used. You never know what can happen. This was in Philadelphia Pa, the virus is bad there and she hasn't been going anywhere. Just recently she went out. I pray for everyone going through hard times. I am sorry about this long message. We thank God for all we have and our safety.

      so sorry to hear that. prayers go out for them! we had a rare 500 year flood, is what they called it. combined with sand blocking the creek drainage, that has since been repaired, we should be good here. But GOD is sovereign, so I fear not. He has all of us. His hand is in everything, even if it's hard and we don't understand the why. God Bless.

    In one of your previous videos you purchased 2 cases of jars and some sleeves of lids. This is what I noticed after I had quite a few lid failures. The new cases of Ball jars I purchased came with rings and lids already on the jars. I removed the rings and lids, washed the jars, lids and ring and proceeded to can. I wondered why my seals failed so I looked at the remaining lids that I did not use and noticed that they looked used. I suspect that the manufacturing process caused the lids to fail because they screwed the lids on and then stacked boxes for shipping on pallets in hot warehouses. This made an indent in the seal surface. I may be wrong about this causing a fail but next canning secession I did not use the lids that came with the jars and had no fails. Check those lids that came with those jars you bought before you use them. It may save you some fails. Peace

I almost fell out of my chair when you started labeling your jars, I'm right-handed as well and thought I was the only one who turned the jars to write on them. Keep the canning videos coming I'm finding it harder and harder to find canning supplies in my area of Virgina I'm hoping I have enough supplies to get me through canning season.

    I have been having a problem with my rings rusting. I thought it was the vinegar in the canner, but you did the simplest little thing and I had an ah ha moment. I don't dry them. I let them air dry. The more you know... Thank you, Heather. God bless

    Great video. Maybe I’m a bit o/c, I also put “bwb” & time, e.g. 15 min. Or “PC’d” 10psi 75 min, e.g. Oops, gotta go and arrange my jars!🤭🙃🙃

      hahaha yes! pie filling is super sticky. remember to leave about a 2 inch headspace, not 1 inch....pie filling explodes in the jar! hahaha
