I have been water bath canning for years, but I recently bought a pressure cooker. The first one was a Presto Pressure cooker because of the cost, $99. The problem is it leaked and the gauge and the added weight I used just did not seem to match plus it would run out of water from all the leaking. I took that back and purchased the All American 915 Canner. I picked that size because these canners are heavy and I usually only do about 7 quarts or pints each. I am just canning for my husband and I and gifts. For anyone that wants to do sustainable canning instead of buying manufactured canned goods the All American canner is absolutely worth every single penny. None could possibly compare to how this works. It was excellent right out of the box on the test run. Your video on the setup of this canner was worth a million dollars. I feel successful because of that video and following all the advice and I thank you so much for that. I do have to brag about my pickles and I did make two different types of very crunchy garlic dill with a bit of a bite. One type was made with the hot water bath method and the other was fermented. I was thrilled with both results. The fermented is very good for a person because of the probiotics and is crunchy and tasty. The jars that were water bath canned are also excellent with a slightly different taste because of the flavoring I added and they are also very crunchy.
I just canned 11 quarts and 46 pints of sauerkraut. My Dad taught me how to years ago. He has been gone for 14 years now and I always think of him when I'm doing it.

Awww. Big hugs to you. I don't think we ever stop missing them. My dad died 31 years ago. But you brought back a nice memory for me. Before my stepmother died they used to can a lot of things among them they would make sauerkraut. They wash the cabbage in the washing machine, I don't think they put it on a cycle I think it was just big enough to put a lot of water in. And one year my stepmother lost her Band-Aid somewhere in it so we didn't eat a lot of sauerkraut that year. LOL
I still have the old quart Atlas Mason jars that belonged to my grandmother. They are still in perfect condition. I think about how many meals the cans have held over the last 100 years. One year I remember filling all of her jars and all of mine. Thinking of her now gives me great joy. Everyone needs a grandmother like I had. I was truly blessed to have her in my life and I miss her everyday. ❤️
As a kid we used to use pie filling and use these sandwich maker things that are meant for campfires and make "pies" over a campfire. Its basically some sort of metal sandwich shaped pocket on a metal stick and you heat it over the fire. So yummy!
We love eating the pineapple jam in vanilla ice cream with a little toasted coconut thrown in. And the plum jelly is our favorite for Asian recipes. Thanks for sharing ! Love seeing your canning videos so inspiring !

We've canned pickles for decades and the trick is to add powdered alum to the recipe. It keeps them crunchy. Also make your slices all least a 1/4 of an inch thick. I love your videos! My favorite is your cranberry jalapeno jelly. Yum!!! Happy canning to ya!

Use your canned squash to make fried squash patties. Little old bay seasoning, garlic powder and flour or bread crumbs as a binder. Drain the squash and mash it up before mixing with other ingredients. My mom has made these since I was little and we all love them! Love your channel and I also love canning.

Canned for the first time thanks to these videos even though I grew up with aunts who farmed and make jellies and pickles constantly. First time - Peach Bourbon Jam - OMG so good! More spreadable than jelly - but works for me - give it a try next year during peach season.
I've just started canning a few weeks ago, I started with low sugar strawberry jam that my family absolutely loved. Then I made my husband's favorite pickled Bologna 😂, dill pickles, apple butter, white grape jam, blueberry jam, and blackberry jam. Today I'm doing Meyer lemon jam and apples in simple syrup, I don't have a pressure canner yet so I can't do the other canning I'd like to do, but I will soon. The jams and apple butter I've done have been in smaller batches, like 7-8 pints, to give to friends and to put up, my husband's pickled Bologna was made using a huge roll so he's got 2 quart jars and 7 pint jars full 😂. I realized when I started how much that ping sound when the jar seals tickles me to death!! I'm hooked, that's for sure, thank you for this video, i love seeing videos of others that explain why they will or won't can something again ❤️
My grandmother and her friends canned a lot back in Arkansas. So much fresh produce back in the 1960's and 70's. She canned tomatoes, cukes, sauerkraut and made the best wild plum jelly. She also made the best Chow Chow and a Pear relish (with a spicy kick) that I've not had since. She also canned mini-peppers with garlic that made the best hot pepper sauce for black-eyed peas! Canning is the best. This is such a great video!
Hello Heather from Tasmania AU. Here in Australia, we call canning "bottling" and it's something I learned from my parents as a child. I don't have a pressure cooker so only do water bath method. My household aren't big jam eaters, but we do a few jars of raspberry, strawberry and blackberry each summer, usually to eat with yogurt. We have a large garden and lots of fruit trees, so we have a pantry well stocked with apricots, nectarine halves, plums, apples and pears (all in water) plus vine leaves in brine (great for dolmades & middle eastern food). Probably the most popular things I bottle are passata (like pasta sauce) and fruit syrups that we drink with plain soda (thank goodness for Soda Stream!) in summer, hot water in winter or to flavour/feed kombucha for secondary fermentation. Terrific idea for a video! I got rave reviews on the vanilla bourbon pears from the new Ball book. I also par cook pork butt, cube it and can it (add cooking juices to water). It shreds beautifully and makes terrific quick pulled pork sandwiches. Totally hooked on canning and so far the family has enjoyed everything I've canned. ❤️👍

This is my first year to can anything and I give Linda's pantry all the glory as she inspired me to do it.. This also has been in many a year that I've planted a garden and I had to have a garden so that I could can.. I loved every moment of canning.. Lol At the same time, last night I ran a water bath canner, ran a pressure canner and ran to the bath room getting ready for the dreaded colonoscopy test today.. Now that's a love for canning.. The water bath canner had 7 pints of tomato sauce while canning 18 pints of chilli sauce in my All American canner.. But I give you Heather the credit for my first ever canning project and it was the blueberry jam and my second was the pineapple jam. Both jams was a big hit.. My thanks goes to you and Linda.. I searched every crack of our Aldi's store for those chocolate covered butter cookies and couldn't find them darn it.. However I did get the Tuscan trail mix and I loved it. Your 2 little ones are cute as a button and just wait until Mina (sp.?) is old enough to ask mom & dad for snacks in Aldi's, lol, you just might be pushing 2 carts in Aldi.. I had a friend whose family who canned their own tuna, We got a couple of jars of it and it was the best tuna we ever had and I still remember it after 25 years.

Great video Heather! This was such a cool idea. My favorite things to can are beans, sauces from tomatoes (pasta, pizza, chilli base) and jellies. My least favorite is yellow squash.
Seems to me that maybe a good use for the canned squash would be fried squash and onions because they squash is soft in that. It would cut down the cooking time on it and that is always a plus. I am so glad all of y'all are doing this kind of video it sheds light on so of the things that just really are good to can because the can again stuff seems to be the same with a lot of the videos. Thank you for sharing with us.
i have started fermenting pickked veggies this year. I took a course. the lady told us to put tanin in the jar, oak leaves or tea bags, whuch helps the veggie stay crusp. I found my pickles came out crisp.
I have so much enjoyed this particular video today. I only just began canning in 2020 Heather. Even though I'm not seasoned, I can still relate, and I learned Alot in that time - from you!

I’ve done yellow squash with onions and chicken broth for an instant squash casserole just to add your egg and breading when your ready. Also you might try your yellow squash if it was done in water for squash pie. Drain , mash and mix with eggs, buttermilk, flavoring and sugar. Put in a shell and bake. Delicious custard style pie

mom used to make a bunch of her pectin with apples. we had an orchard close by that hired her and my brothers to pick - she would use the skins and boil them down and make her own pectin. her budget was extremely tight. made wonderful jams and syrups
I haven't done any canning on my own, but I remember as a kid helping my mom and dad in an assembly line in our kitchen. My dad always had a huge garden with tomatoes, beans, peas, okra, corn, and all kinds of melons. They froze a lot of it, but the tomatoes got canned. One of these days, I'm going back to my roots.
Yes, me too! I love canning but with just the two of us it takes forever for us to eat it. I also do a lot of dehydrating. When I had kids at home I didn’t have the time and now that I have the time we just don’t seem to eat as much. This was very informative. My grandmother use to can when I was a kid but she never taught any of us how. I've always been interested in canning but never got into it and now that my kids and I are older, I truly want to learn.
This is what I found out when I started canning. ( I'm from the UK 🇬🇧) I was watching canning video's and they were complete meals. Then I realised I had 18 meals of this and so many of that. I wanted to walk in to my pantry and say this is what we are are having for tea and pick up the jars. Also the nice thing out of all of this is our children and grandad children will say phone Nana I bet she has it in her pantry. What more can I say it makes me proud that my grandchildren love my pantry x
I love canning pints of "tomato gravy" its tom sauce and diced mixed together I can add it to anything for a bit of flavor poured over ham is my fave for breakfast in a frying pan with fried eggs
Heather, honestly use no. 10 cans of sauce and diced toms from sams club, I just bring it up to heat and put in hot jars add lemon juice wipe and water bath to get a good seal. I use it to extend sauces if we have company drop by or add to soups and chili. My family loves ham warmed up in it because the ham adds more flavor to the sauce, its my go to for quick meals along with beans and canned meat.
I'm so sorry for your loss. Just seen this video My go to jar is broth. Towards jam my biggest request is my strawberry/ mango and pomegranate. My emergency go to is my beef or pork bean soup. Go to vegetables are corn or asparagus. Towards won't can again is prickly pear jam, chick pea soup & pickles. Thank you for this video.
This was the best video! Thanks for taking the time to share. I canned a recipe for beets called "Phat Beets". I will never do that recipe again. My ring never lost the rosemary herb fragrance that was in the recipe. It was suppose to be a "savory" beet. I ended up having to replace my ring on the pressure canner after that! I just do plain beets in water now. I am not fond of pickled beets, nor did the savory beets taste good.
I love this video! I must say that I am not an ingredient canner either EXCEPT for my chili beans! I can all types of plain beans but I absolutely love to have chili beans. Something that I canned that we did not like/use was bruschetta! I thought we would really enjoy it but no dice! I also love my canned peaches! Canning is such a rewarding thing to do. Linda Segraves I have watched her videos. She is one of my favorites as well as Heather from kneady homesteader. I must admit potatoes are not my favorite but my husband loves them! So I make them for him and in the long run for me as well. He will often have dinner waiting for me when I get home if I have canned potatoes and some type of meat usually home canned corned beef! So for that very reason I can potatoes!

whole mustard seeds in canning helps pickles to stay crisp, try that on squash for experiment
If you add pickle crisp to Mrs Wages dill pickles they will be very crisp. Love them.

Plum jelly mixed with soy sauce is really good with egg rolls. I have ice cream but no pineapple :-(

I chop up the yellow squash before canning it, then I mix it in with my cornbread dressing. The squash makes it very moist!

You can absolutely use the summer squash and the mix in sweet bread! They work just likely zucchini. I do it all the time.

Terrific idea for a video! I got rave reviews on the vanilla bourbon pears from the new Ball book. I also par cook pork butt, cube it and can it (add cooking juices to water). It shreds beautifully and makes terrific quick pulled pork sandwiches. Totally hooked on canning and so far the family has enjoyed everything I've canned. ❤️👍
i have yet to can pork butt, but i want to!!!!!! and i have been dying to try that vanilla bourbon pears! now i know its worth making!!!! thanks mama!

This is my first year to can anything and I give Linda's pantry all the glory as she inspired me to do it.. This also has been in many a year that I've planted a garden and I had to have a garden so that I could can.. I loved every moment of canning.. Lol At the same time, last night I ran a water bath canner, ran a pressure canner and ran to the bath room getting ready for the dreaded colonoscopy test today.. Now that's a love for canning.. The water bath canner had 7 pints of tomato sauce while canning 18 pints of chilli sauce in my All American canner.. But I give you Heather the credit for my first ever canning project and it was the blueberry jam and my second was the pineapple jam. Both jams was a big hit.. My thanks goes to you and Linda.. I searched every crack of our Aldi's store for those chocolate covered butter cookies and couldn't find them darn it.. However I did get the Tuscan trail mix and I loved it. I love the sesame sticks that was in the mix. Your 2 little ones are cute as a button and just wait until Mina (sp.?) is old enough to ask mom & dad for snacks in Aldi's, lol, you just might be pushing 2 carts in Aldi.. Try dehydrating dill pickle slices to eat as chips. 2leelou preserve did it I believe and enjoyed. Maybe try a few slices to see if you like?

My sister and I canned meatloaf last year. It was amazing. Quick and easy dinner for when you are running out of time to make anything. I also will only can my meat in broth. It is just the best. Thanks for sharing Heather.

I had a friend whose family who canned their own tuna, We got a couple of jars of it and it was the best tuna we ever had and I still remember it after 25 years.

Great video Heather! This was such a cool idea. My favorite things to can are beans, sauces from tomatoes (pasta, pizza, chilli base) and jellies. My least favorite is yellow squash.

Seems to me that maybe a good use for the canned squash would be fried squash and onions because they squash is soft in that. It would cut down the cooking time on it and that is always a plus. I am so glad all of y'all are doing this kind of video it sheds light on so of the things that just really are good to can because the can again stuff seems to be the same with a lot of the videos. Thank you for sharing with us.
i have started fermenting pickked veggies this year. I took a course. the lady told us to put tanin in the jar, oak leaves or tea bags, whuch helps the veggie stay crusp. I found my pickles came out crisp.

I’ve done yellow squash with onions and chicken broth for an instant squash casserole just to add your egg and breading when your ready. Also you might try your yellow squash if it was done in water for squash pie. Drain , mash and mix with eggs, buttermilk, flavoring and sugar. Put in a shell and bake. Delicious custard style pie

I have canned jellies for years but according to my grandmas recipe. Now I’m starting to can with hot water bath and pressure, depending on what I’m canning. We also have a small garden. mom used to make a bunch of her pectin with apples. we had an orchard close by that hired her and my brothers to pick - she would use the skins and boil them down and make her own pectin. her budget was extremely tight. made wonderful jams and syrups
I haven't done any canning on my own, but I remember as a kid helping my mom and dad in an assembly line in our kitchen. My dad always had a huge garden with tomatoes, beans, peas, okra, corn, and all kinds of melons. They froze a lot of it, but the tomatoes got canned. One of these days, I'm going back to my roots.

Yes, me too! I love canning but with just the two of us it takes forever for us to eat it. I also do a lot of dehydrating. When I had kids at home I didn’t have the time and now that I have the time we just don’t seem to eat as much. This is a great video because I wouldn’t want to make the mistakes of mushy stuff either. Thank you so much!
This was very informative. My grandmother use to can when I was a kid but she never taught any of us how. I've always been interested in canning but never got into it and now that my kids and I are older, I truly want to learn.
This is what I found out when I started canning. ( I'm from the UK 🇬🇧) I was watching canning video's and they were complete meals. Then I realised I had 18 meals of this and so many of that. I wanted to walk in to my pantry and say this is what we are are having for tea and pick up the jars. Also the nice thing out of all of this is our children and grandad children will say phone Nana I bet she has it in her pantry. What more can I say it makes me proud that my grandchildren love my pantry x
I love canning pints of "tomato gravy" its tom sauce and diced mixed together I can add it to anything for a bit of flavor poured over ham is my fave for breakfast in a frying pan with fried eggs

Heather, honestly use no. 10 cans of sauce and diced toms from sams club, I just bring it up to heat and put in hot jars add lemon juice wipe and water bath to get a good seal. I use it to extend sauces if we have company drop by or add to soups and chili. My family loves ham warmed up in it because the ham adds more flavor to the sauce, its my go to for quick meals along with beans and canned meat.
I'm so sorry for your loss. Just seen this video My go to jar is broth. Towards jam my biggest request is my strawberry/ mango and pomegranate. My emergency go to is my beef or pork bean soup. Go to vegetables are corn or asparagus. Towards won't can again is prickly pear jam, chick pea soup & pickles. Thank you for this video.
This was the best video! Thanks for taking the time to share. I canned a recipe for beets called "Phat Beets". I will never do that recipe again. My ring never lost the rosemary herb fragrance that was in the recipe. It was suppose to be a "savory" beet. I ended up having to replace my ring on the pressure canner after that! I just do plain beets in water now. I am not fond of pickled beets, nor did the savory beets taste good.
I love this video! I must say that I am not an ingredient canner either EXCEPT for my chili beans! I can all types of plain beans but I absolutely love to have chili beans. Something that I canned that we did not like/use was bruschetta! I thought we would really enjoy it but no dice! I also love my canned peaches! Canning is such a rewarding thing to do. I'm canning potatoes this weekend cause my hubby loves them! Have a great night!

Linda Segraves I have watched her videos. She is one of my favorites as well as Heather from kneady homesteader. I must admit potatoes are not my favorite but my husband loves them! So I make them for him and in the long run for me as well. He will often have dinner waiting for me when I get home if I have canned potatoes and some type of meat usually home canned corned beef! So for that very reason I can potatoes!
