My friend works as a chef in his 2 michelin restuarant in singapore. And that friend of mine is a crybaby and would quit if its a toxic work environment. Shes been working for him for 10 yrs now and they have tons of picture hugging and being friendly with each other. A rare chef and a rare kitchen environment specially since its fine dining and a top restaurant. Goes to show that you can cook good food without the toxic environment that the old school chef like gordon and the french has promoted as the norm.
"I have to find the time" is the realest quotes anyone has ever said in this series. People see all the watches and all the money they have, but very rarely they see the HARD work that is required to achieve such collections. AMAZING interview.
I wore Daniel’s Cartier at his restaurant “Daniel” several years ago. I was dining with 2 executives from IWC who were in town for the opening of their Flagship Boutique on Madison Ave. We went to Daniel for a dinner and Boulud sat with us at our table for 20+ minutes. He commented on my IWC Portuguese Perpetual Calendar and I took it off and we traded watches for the 20 mins! We talked about watches and the restaurant he just opened in Singapore and his jet-lag!
It’s been said before many times but his skill as an interviewer, subtly guiding the conversation to continual points of interests, is of an outstanding level.
If anyone is interested, you can watch a Parts Unkown documentary by the late great Anthony Bourdain on Lyon (with Bouloud along for the ride) which follows some of Bouloud's career and development into a three star Michelin chef, as well as spelling out the particular magic Lyon offers the world of cuisine.
Beautiful collection, every piece has its place in the owners journey… as it should be. Monsieur Boulud is a legend, class all the way. And let’s not take for granted Ben’s undeniable talent as a host. More of this please!
Talking Watches for me is the ultimate watch showcase. It's so pure in the way it shows the connection between people and their watches. Rises far above other youtuber content that seem to have biases to particular brands and unexplained hatred towards others. The followers of those channels (I'm looking at you Nico L) may cringe at the Ferrari Panerai featured here or the (gasp) Hublot. But the enthusiasm of Chef Boulud and the way he speaks with joy about each of his pieces truly shows that it makes no difference what watch you buy as long as you can build a connection with it. On a separate note, great to see Ben regularly back in the interviewer chair.
I'm here for this kind of video. I've been to Restaurant Daniel many times. Next time you're in NYC, book it. You'll spend some money, but it's well worth it.
Love Chef Daniel's approach to collecting. It's not about brands or the hottest trends. But about important events and people in life, with the watches just being part of those memories.
His answer to Ben’s question about who he still gets excited to see was awesome. I own restaurants and still cook occasionally and that what I love seeing too.
Lovd his collection, they all looked like they have been worn and enjoyed. Every single one of them has a personal story and attachment to him, loving it. This is what collectinf watches is all about, good video
Agree completely. My Breguet is an eye magnet in any sophisticated, knowing company. My daily beater is my 25 year old Explorer. The Breguet is slipped on, almost with reverence.
Thank you for bringing back the old Hodinkee, Ben! This website is the main reason why me and many others were able to easily fall in love with watches
Very warm episode, full of nice watch stories and friendly people. Also you can see that it earned through hard work and great relationships. Keep it up!
It's always interesting to see, how flashy modern Rolex watches look on wrists. Imagine a 5 digit on his wrist at the beginning. It would be much more class.
Good interview.Ben looking a bit slimmer here🙂What are the marks on the GMT bezel?I thought that ceramic doesn;t scratch unless it's splatter from cooking
Is ben wearing a platinum perpetual calendar AP in this, or is it a steel model? I picked up a platinum tropical dial AP with the diamond indices the other day. Let me tell you about the HEFT.
The fact that Chef mentioned the joy of seeing children in his restaurant tells us all we need to know about the type of man he is. Beautiful.

Beautiful story behind the daytona.

I love how beat up all of his watches are.
Agree totally!
Totally Agree!! It shows a working chef that loves his craft
Yes nice to see his collection is enjoyed thru use.
Indeed, a professional kitchen must be a brutal environment for any watch on the wrist
been to Daniel many times. He is always walking around talking to guests. Stunning bar. He lives upstairs in the incredible townhouse. Go visit!
One of the 3 best restaurants in the city, in my opinion.
He was wearing the root beer gmt master 2 in his cameo in “The Bear”. Incredible watch with incredible presence on the screen
The old Hodinkee is till in there somewhere. Great video.
for the first time i feel genuine happiest from his smile about his collection and how he kept all the memories (good and bad) with each piece
One of the best talking watches of recent memory.
Ben is looking healthy and wealthy
Living the rich life
*Benjamin
Meanwhile inflation is....... yeah.
That’s good cause everyone at crown and caliber is looking for a job
Ozempic is a helluva drug. Just ask me.
So great to see Ben doing these interviews.
It’s been said before many times but his skill as an interviewer, subtly guiding the conversation to continual points of interests, is of an outstanding level.
One of my favourite Talking Watches so far... Definitely hodinkee style all around! Don't stop delivering us these!!
Great interview. A lot of story for once as opposed to the stale AP skeletons & Pateks from the sports-pros.
💯🏅

Fantastic reference. Was thinking of this all throughout and missing Anthony.
I had forgotten about that! Thank you for reminding
I watched that EP recently, great shout out
Old school ‘talking watches’. You still got it, Ben. M. Boulud is pure, unadulterated class.
Beautiful collection, every piece has its place in the owners journey… as it should be. Monsieur Boulud is a legend, class all the way. And let’s not take for granted Ben’s undeniable talent as a host. More of this please!

My 50th birthday dinner at Daniel was fabulous and chef Daniel took the time to speak to guests.
A refreshing reminder of the good ol Hodinkee
It's always amazing to see a collector with a watch you wear and love.
The kindness and warmth the Chef exudes is so charming. Absolutely love this interview.
I'm here for this kind of video. I've been to Restaurant Daniel many times. Next time you're in NYC, book it. You'll spend some money, but it's well worth it.
Great to see the watches have been worn and enjoyed
This was a great time. The energy, conversation, it all came together. Well done, Ben 🎩
A really touching and meaningful episode around a diverse range of watches.
Love Chef Daniel's approach to collecting. It's not about brands or the hottest trends. But about important events and people in life, with the watches just being part of those memories.
a lot of respect for this man who is indeed a great chef and a bro from Lyon
An absolutely beautiful episode with a superb guest and Ben doing what he does best - Talking Watches
What a humble gentleman and distinguished guest.
Where? Couldn't spot anyone matching those descriptions ...
His answer to Ben’s question about who he still gets excited to see was awesome. I own restaurants and still cook occasionally and that what I love seeing too.
Him with Tony Bourdain on Parts Unknown was one of my favourite episodes.
What an awesome gentleman! I had the pleasure of celebrating my 50th birthday at Daniel and i collected a memory for life!
I love the Chef’s generosity
Lovd his collection, they all looked like they have been worn and enjoyed. Every single one of them has a personal story and attachment to him, loving it. This is what collectinf watches is all about, good video
Phenomenal interview. Love this series so much
This was a very pleasant interview, but a Frenchman that loves watches without a Breguet is heartbreaking.
You feel that? That tingley sensation? Feels like Hodinkee is back. The original Hodinkee. Amen!
Enjoyed the interview! His restaurants are amazing - anyone who has dined at them knows.
Greatest burgers and fries.
What a great story from one if the best chefs . Awesome !!!
Great vid, always enjoyed watch spotting in The Bear.
Ben, it looks like life is treating you well Sir 👊🏼
Unbelievable that Daytona story. Blew my mind.
Beautiful collection with a lot of history. Seems to me to be a very likeable, down-to-earth guy despite his great success, that's how it should be.
The Daytona story you could feel the pain still. Such a great piece but an even more emotional story
What an amazing personality! Loved this episode.
one of those good ones that will be rewatched every now and then:) class chef!
Best episode for a long time ben , congrats 👏 absolute lovely guy , keep.up the great content
Excellent episode. Well done Ben.
wonderful person with wonderful watches. thanks for this interview.
Great interview, cheers
Very warm episode, full of nice watch stories and friendly people. Also you can see that it earned through hard work and great relationships. Keep it up!
Love Talking Watches amazing story....Great video!💯
Always good to see Ben doing these
Great interview with a wonderful chef! Hodinkee, congrats on great production value in this video. It makes a difference.
Thank you for this video!!🙏
Great to see you doing this, Ben!
Great one. I have fond memories of his DC restaurant. 🎉
Great episode!!!!!
An interesting person sharing very interesting and personal stories. Thanks Hodinkee.
Great episode and reminiscent of earlier Hodinkee days. Good stuff!!!! Keep them coming.
Great episode. DB comes-off as such a nice, cool guy.
Back to the roots Ben. That is how we like hodinkee. Only Ben dose the best talking watches.
_WHAT_ a great video. Superb.
Absolutely enjoyed this video. Thank you.
Charisma, 100%. That's why Chef is as successful.
Offloading his Hublot’s as presents 😂
Haha Ben calling out his John Mayer that’s got 5x more value than Chef’s collection 💀
very much enjoyed this!
Chef Boulud needs a Patek. He should definitely get one if it comes with a reservation at his restaurant!
I can't imagine how this man would have any difficulty in obtaining the Patek of his choice.
Loved this. Ben in the driving seat. Chef, which Patek, this is the critical question, that can set a passionate debate alight.
That story about his friend Andrew was very moving
What a cool, charming guy 😎👍 Great episode
Just have to intervene. My dude is casually rocking a John mayer AP. So nonchalant about it, that is the most stunning piece.
Ben is looking good! Young nerd gone. Middle-aged wealth mode engaged!
Thank you
Everyone wants to be in Daniel's good books. That last minute resevation can otherwise be hard to come by.
why is the date gradually changing on the Pepsi?
Boulud is the Paul Newman Daytona of chefs.
It's ALWAYS 'Who you know!'
Yes! Ben!
11:45 , the things of interaction that you don't see often. Ben explain what he wore effortlessly, include a slight bit of marketing campain
First person here and I’m loving it
Is ben wearing a platinum perpetual calendar AP in this, or is it a steel model? I picked up a platinum tropical dial AP with the diamond indices the other day. Let me tell you about the HEFT.
Incredible vid, now please do one with Eric Ripert.
great vid
yes, more cool people with interesting collections and not just entertainers with the same 5 APs
Can somebody tell me what is the cartier santos model / ref. no? That thing is beautiful.
Hi, what bracelet are you wearing ?
Are these back? I feel like I haven’t seen one in ages.
man that daytona was special
This is like the band playing while the titanic sinks 😂😂😂😂😂😂😂😂😂
Every watch ⌚ has it's own story.
Watching this while eating canned chicken, frozen peas, and powdered milk, and my timex expedition made me feel quite poor.
Ben with that ap open worked royal oak. that 40 mil is treating him nicely!
Awesome watches. ⌚⌚⌚
Ben casually drops his has on an AP Pert Cal JM
why did you close in Boston :(
