Blood Sugar vs Popcorn - Is Adding Butter Better

    A couple of months ago, I used my non-prescription CGM from Levels to see how plain popcorn would affect my blood sugar level. The result was very poor. It shot my blood sugar straight up and just as quickly dropped the level to a point lower than my starting point.
    Sharing this result spurred a lot of questions about buttered popcorn. Since butter is pure fat, (which is a nutrient that does not spike blood sugar), would adding butter to the popcorn make it a better snack for blood sugar control? Well, I ran the test. It should be better, right? It was not what I expected. Here are the results.

    Pre pandemic I was a healthy eater and a regular at watching your videos. Over time, I have gone back to carbs and have re- gained a few pounds. This week, I had a delicious greek salad and I decided to try eating more salads and less carbs again.Your channel popped up in my mind because what you taught me years ago was so helpful and I knew I had to follow you again. Thank you.

    I had the exact same response. I was kind of surprised that a baked potato loaded with butter and sour cream, had no noticeable spike. Neither did whole milk. I'm not sure if everyone would get the same response. Whole milk with Hershey's chocolate spiked it though! lol

    Well, i love popcorn and limit to once weekly, homemade, but i do anchor it with an Oikos yogurt. Doing it this way, I don’t feel hungry again until its time for my next meal…..how about going for test #3 and anchoring the popcorn with a lower fat protein? I’d be curious on those results…PS love your info! ❤️

    I had buttered popcorn with protein (scrambled eggs) and the app gave it a score of 8 and graph was all over the place in about a 15 mg/dl range ... so it does depend. I'm sure if I'd eaten only the popcorn it would have spiked a lot.

    Levels was how I found out certain “keto friendly” products like ChocZero and a variety of low carb tortillas caused my blood sugars to spike massively. That was the push I needed to make my own keto treats and tortillas with ingredients I can control, even if it takes more work.

    Well I am interested if this result would be the same if you did this later in the day and not after an overnight fast? Also when I eat popcorn, which is not often I always cook it in coconut oil, which coats the popcorn. Also your butter really wasent very much. Would love to know the answers to these questions.

    Wow! Interesting info. I usually eat on a weekly basis alot of popcorn (1/4 cup before popped) with a stick of butter and ghost pepper powder. no salt. Now I know why I can't seem to loose belly fat. thanks for being the guinea pig for us.

    I'd get a glucose monitor but I'd rather pay a flat price vs paying for yet another subscription. Companies could just sell the app and kit but everything is so gd monetized its frustrating. They already make a ton from our medical data too.

      After asking, my doctor just gave me a prescription to use a CGM for a month and I’m sure, if/when I ask, he’d give me refill on the prescription. Unless your phone does NFC (near field communications) you’ll also need to buy a reader.

    Interesting. Thanks, DB. Popcorn without butter was my go-to snack when I craved it. Which is not often -- maybe a couple times a year. Maybe I'll find something else? Maybe you'll discover a good option? Knowledge is good. Thanks!

    Dr Becky. Hi! I have your book and I also got your plan off your website. I've been watching for a long time and I've lost 65 pounds 😊 I just lost my Mom and I'm finding it hard once the night hits to not binge eat. I'm not gaining weight, but I know I'm hindering my progress. I know all the right answers and things to do, but my willpower is so low at the end of every day. I have no time to myself, and I restrict from OMAD every day but have been in this cycle since I got her ashes at the beginning of this month. Is there anything I can do in these moments of weakness? I was heavy and it was impacting my health I can't get that heavy again. I'm sorry so long, I really am seeking advice, and you're my first choice. ❤ be blessed!!     I ❤ this video. I'm saddened by the results on the buttered popcorn because it is my favorite snack food. I thought I did good when I switched my chips & salsa for popcorn 😊 Also I have been interested in getting a glucose monitor but was denied by insurance. Thank you for talking about this.       I went to my pharmacy n asked if they gave away free glucose monitor n yes they did however I had to buy more test strips n pin sticks. Ask how much for extras before purchase. It works fine n I don't check all the time. It did come with a few sticks n test strip.

    Thank you for this video. I had read, a couple of years ago, that if you ate a donut or something just eat a handful of almonds and it would cancel it out. I didn’t think so.

    Popcorn was a favorite snack of mine before going ketovore. I was hoping the butter would make it better, but I'm not at all surprised it didn't.

    I may try this same experiment, but have ACV before and add another tbs of butter. Sheesh...I have PCOS so no dairy. I'm running out of snack options. Maybe once I get the weight off I can start these experiments instead of setting my weightloss goals back. Thank you for posting this!

    It must be a very American thing to eat popcorn? We're just not into here in Britain. None of my friends eat it, and I only ever see kids eating it in the cinema in Britain - with a parent perhaps have a few out of the kids' boxes! Each to their own I suppose, but I'm doing my best to keep to low carb and intermittent fasting. I absolutely love pasta and Italy like everyone here loves popcorn, but along with potatoes, rice, wheat bread, sugar and the likes that all sadly turn eventually turn into sugar, I have simply cut them out at home and in restaurants, and it's the easiest thing to do than play games with food, having a bit here and a bit there. If, however, I were asked out to dinner in someone's home, then I would eat whatever I was given than be a picky guest for anyone. When people come to me, they get low carb or even keto. I have two stones to lose, or 28lbs in American, and if I don't do it in the summer and keep to this, I certainly won't do it in the winter, with the last severe winter being the cause of 12lbs put on, and be the same again next summer!     Kind of scary. Years ago, plain popcorn was a weightloss go-to. Last time I ate popcorn (pre low carb) I felt awful then heard how it spikes blood sugar. I can live without it.

      Apparently having a little protein like an egg or a piece of meat 10 minutes before plus a little acid like apple cider vinegar just before carbs help to blunt the blood sugar spike. Dr. Jason Fung has a video on it.

    So...if I ate this and then took my evening walk, using the quick energy right away, would this make it a good occasional snack? Adding a form of exercise directly afterwards?

    My blood sugar goes up every time I consume popcorn. I consume Skinny Pop popcorn, and I'm wondering if the sunflower oil that it is cooked in is the culprit...

    When I cheat with a bowl of popcorn I usually put at least a half a stick of butter in it. This has to change the glycemic index of the popcorn. Right?

      I also use half stick of grassfed butter lol, and I will eat the popcorn as a dessert right after my dinner (once in awhile, NEVER on an empty stomach) still having food in my stomach to slow it all down, having already eaten my vegetables/salad first, then proteins, fats, (carbs- would be the popcorn & fat the butter) and or then any sugars if any last (ex: a dessert of a green apple with peanut butter) all in that exact order if I were to have all of that or a choice. And if I really wanted popcorn (air popped only) and it wasn't near dinner time I would never eat it as a snack, I would make a big salad first, then eat the popcorn loaded with that grass butter & maybe not have dinner... I also make a point of moving around for 10/15 minutes cleaning up the kitchen, dishes or dance (I am 58, love 70's music [the Bee Gees gets you boogying] lol & dances around the house daily) to use up some of that glucose! Everyone is different, but this works well for me.

    Also, if your dr is not recommending a cgm, you probably don’t need one. A glucose monitor that uses a strips is better option and would be more affordable and doesn’t take away from those of us that need a cgm. Some places are experiencing shortages.

    Interesting result but would have been even more interesting if done with same amount of popcorn (cooked in something like coconut oil one would hope) and more than a tiny amount of butter.
    Chances are popcorn can not be redeemed 😓 but naked air popped must be the worst.

    To add insult to injury most popcorn will be GMO. Years ago when I did eat popcorn I would melt a half a stick of butter and pour it over the popcorn (more like popcorn soup). I live on a minimum of 8,000 calories a day and 300 grams of protein at a body weight of 135 lbs for 2 YEARS add didn't gain weight so the butter was never the problem.

    This is disappointing but not surprising. In addition to butter, l add parmasean or pecerrino Romano cheese. No additional salt. I am curious if the cheese helps at all

    Diabetic people do NOT have issues living their lives with sugar spikes under 150. Looks like 93+150...that's 243! very high blood sugar wow! 77+70 144 second popcorn was acceptable levels imo. I also watch beat diabetes and his baseline is also 150. So butter was FANTASTIC to add! Add butter every time. Food staying under 150 is certainly awesome to eat.

    Food should have a measure for how much it spikes your blood sugar - just as it now lists carbs, fat, and protein.

    This doesn’t say good things about canned or frozen corn either. I have a adopted a rule of thumb that says wherever a plant stores energy is where the carbs are. So I guess I’ll be limiting that as much as I can. I would love to use a CGM but I’m not going to pay for a subscription. I also think that it’s a great idea for them to improve their product but if they want my information they need to pay me for it and not have me pay them.

    I use extra virgin olive oil and whatever spices I want ..garlic powder, Parmesan cheese, Italian seasoning, chili powder. grated white cheddar , salt and pepper whatever spices I feel like ...sadly though all corn products in the US are now GMO so I am weaning myself off popcorn .

      You are wrong, If you buy organic popcorn it is NOT GMO. You need to do more research.

      @@bettymon1748 perhaps ..what I read said ALL corn and corn related products now in the US are GMO... I do not like corn anyways so no big loss except maybe popcorn but then again I also read adults should not eat popcorn

    CGMs show the extent that metabolism differs. IMO, not valid to generalize her results as she does here.

    I have ‘dry’ popcorn for snack sometimes as I thought not adding any fat is better.
    I don’t understand why this test was done first thing in the morning? Who has popcorn for breakfast?

      She likely did it then because her BG response wouldn't be swayed by any other food eaten. It doesn't matter what time you eat any given (carbohydrate) food--it will cause a blood glucose spike then insulin response.

    I thought spikes we’re not problematic. It’s whether or not your blood sugar level stays elevated and doesn’t return relatively quickly to normal that indicates insulin resistance.
