The most simple juicy delicious Rack of Lamb ever!!

- This is the most simple, tender, juicy, moist and extremely flavorful rack of lamb recipe ever!
Ingredients:
1 rack of lamb (rinse & pat dry) - quality matters, I recommend New Zealand lamb
1/4 cup olive oil
4 cloves garlic
juice from 1 fresh lime
salt & pepper to taste
Place rack of lamb into small baking dish. Add all ingredients to dish and mix well. Pierce lamb to allow flavors to absorb.
Bake in oven at 375 degrees for about 1 hour. The top should be very well browned.

Hi Tiff, I cooked the grassfed lamb from Trader Joes a couple. They were more tender than the ones from Costco which were Australian. I'm hooked on rack of lamb. I tried a different recipe of a marinade of grey poupon mustard, mint, thyme and rosemary. Super simple but takes more time and money because herbs are not cheap! I'm going to start growing my own herbs.

@@tiffslittleoven for me lamb = rosemary but that's because I learned from the Greeks I used to work for, but I have never done a rack before, just diced and slow roasted with potatoes.

Hi Tiff, i made these last night. Super easy and really good. I used lemon instead of lime because that's what I had. I used a glass pyrex casserole dish to place in the oven. Next time I will cut the cooking time to 45-50 min so that it'll be medium rare. I set it on the counter to rest for about 15 min so that the ribs would retain the juices.
Where did you buy your NZ ribs? I bought my Australian rack of lamb at Cost for $9.99 a pound.
I once saw a friend use kitchen shears to cut meat. I used a pair that I bought at Burlington to cut the raw meat and cooked ribs. I washed the scissors in between. This makes cuttng the meat way eaiser than with a knife. You can usually find them at TJ Maxx, Marshalls, Home Goods, etc fro $3.99 - $5.99.
I am so glad you enjoyed it! And, thank you for the great tips on preparation! I’ve started using a food scissors as well! You can get the New Zealand lamb from sam’s club or Trader Joe’s, at least where I live. Both come from the same source. Please find the New Zealand rack of lamb sometime if you can- it makes a world of difference in flavor and texture and overall experience. The New Zealand lamb I use is grass fed, free range and I buy it fresh, not previously frozen!
Oh, and I forgot to mention it is a little bit more expensive per pound, but it’s worth it!
@@tiffslittleoven I'll have to try the ones from Trader Joes. I was just there. I love meat from NZ. I visited several years ago. They have more sheep then people. Seriously! I think grass fed and pastured is a way of life there and Australia. Costco even has NZ grass fed ground lamb 3 oacks for $19.99. Thanks for everything!

Thank you for this post! It prompted me to do a little research... finally :)! It seems that there are many different traditions for meat prep which include piercing meat/not piercing meat. I still like to pierce my meat. Right, wrong or indifferent, this method and recipe I still love!
