I love this flour, Johnny DeFrancesco, another excellent pizza guru is featured on the packaging! I wish it were more widely available in the states. It can be purchased in small batches on Amazon.
The Cacio e Pepe looked amazing. Genius to use ice.

Great video. That oven is a game changer. Can’t seem to get results like that in a rock box. The rock box is simply too small and is too close to the flame.

It´s one of my favourites!!
interesting to see that he open the pizza on the final size and put the toppings on it, everybody else keep saying you stretch the pizza on the peel to bring to size after the toppings. His way was gentle and easy to follow. Thank you Morgen.
