I was a little worried about starting as a PE after I graduate because I wasn’t exactly sure what tasks I would be carrying out, but this video truly destroyed any uncertainties I had!
Great analogy with tennis & football. It's frustrating to work with a tennis player. One thing I would add to the role is that there is always a QA/QC roll and it can sometimes be huge. This can put you at opposition with a subcontractor at times but could be critical to the project.

Is this something that requires a bachelors degree in civil engineering? Currently a sophomore in college who has an interest in construction, but little experience in it.

Would this work be counted towards my PE if the project manager I work under has a PE license?
@ working as a project engineer will likely not help you towards your PE. And you won’t need your PE for a long career in construction. It really depends where you want to end up.

What would you call a project engineer that’s more hands on and in involved with Field Operations as much as project management? I have kind of a niche role for a concrete subcontractor.

I would call that role Amazing!
But in all seriousness I would call it PE, Field Focused PE, or Field Engineer.
