What that white gunk on your salmon actually is - and how to prevent it

  • Many people believe that the white gunk on cooked salmon is fat. However, it's actually a soluble protein called albumin that is also in egg whites. Having too much of it on your salmon could mean that it's overcooked. You can easily minimize it by soaking your fish in a brine solution for 10 minutes prior to cooking.

      Lovely Video clip! Forgive me for the intrusion, I am interested in your opinion. Have you researched - Giulian Bicepify Boarhound (erm, check it on google should be there)? It is a smashing exclusive guide for building huge arm muscle fast without the normal expense. Ive heard some incredible things about it and my old buddy Taylor at very last got great results with it.

      This was great, thanks, I have been researching "men home workout" for a while now, and I think this has helped. Have you heard people talk about - Zanabriel Workout Weevilled - (Have a quick look on google cant remember the place now ) ? Ive heard some incredible things about it and my co-worker got cool success with it.

    I worked in a seafood restaurant for a year, this is generally know as the fish's "milk."
    If you season the fish, caramelise one side of the fish, flip it, add butter and then put it in a preheated oven (180 celsius,) once you start seeing the milk started to come out of your fish it means it's pretty much perfectly cooked, give or take 3-5 mins depending on the size of the fillet

    They explained what is the white gunk and how to reduce while cooking, but they didn't say why should you do that. Is the albumin protein bad or something?

      Isolwi1, it's safe to eat. The video just said that a large amount might mean it is overcooked, and I guess people think it looks ugly and less-appealing.

      When it is heated (cooked), the albumin protein denatures meaning its shape changes allowing them to bind together and appear as a white 'gunk'

    Albumen with an "e" is the term for egg whites. Don't confuse it with albumin, the inadvertent by-product of cooking salmon.

    Albumin is natural and needed by your body. I have Systemic Lupus and once my feet swelt up like a pregnant woman's feet. I'm not pregnant or even close! I went to my doctor and he had my blood drawn and as soon as I walked in the door. The phone rang and he had me come in to get admitted into the hospital for about a week because I was deficit of Albumin. By the time I got back it hurt to put pressure on my feet. They itched, we're so puffy ant the skin was tight. It felt like they would split open. I had two IV's of Albumin for infusion therapy which took 8 hours to run. By the third day I was able to walk. I'm light skinned in tone but my feet turned dark, itched like mad, and all the loose stretched out top layer of skin peeled off. For a week afterwards I looked like I dipped my feet in Elmers glue like we did with our hands in grade school. That was the scariest, most uncomfortable thing that happened to me. So now I devour salmon, eggs and anything else with it in it.
