Las night I used my pressure canner for the first time, I purchased an all american 2 years ago and had been to scared to use it, but after watching almost all of your canning videos, I got up the nerve to can 7 quarts of pinto beans haha and I loved it! Tomorrow I plan to use my 6 pounds of tomatoes and a package of Mrs. Wages pasta sauce seasoning to make and water bath can some sauce. You are a wonderful teacher, Linda and I am so thankful to have found your channel.
Linda, I found a beautiful Cherry Tree on the side of the road on my way home from work last night. So I stopped and picked a bunch. This tree was out in the middle of nowhere. Those cherries look beautiful! You will love having those on hand when you want them. There is nothing like having home canned foods available all year. I also loved what you talked about in regards to food waste. I can only imagine how many people actually think the food is suddenly poison on the expiration date on the container. However over the past several years some manufacturers have started putting "Best By" dates instead of "Expiration" dates. That is in an effort to stop food waste too. Because really the rule is that after a period of time canned foods just begin to lose the quality of the food. So it's not a safety issue it's a quality issue. In my opinion home canned food is good for a lot longer than you would imagine. I just opened baked beans I canned in June 2013 and they were terrific. My husband even said those are his favorite over any other brand....LOL I told him that is 'My Brand' ...LOL I guess I'll have to make some more this year that we might be eating in 2019! Thanks for the great video.

It's been a few years since I've canned. I've never canned cherries before. Our friends tree was chock-full of cherries, extra juicy from this heavy rain season! I love the limits of honey part sugar. Thank you for sharing your thoughts 😁... Back in 1984 I didn't wipe my bottle tops, when canning peaches my first time, and only two sealed out of 20 quarts😭 but wiping the tops have made for perfect sealings ever since 🎉. Also, the heads up about not over heating the lids sealing material and using vinegar to soak the lids ready 😃... I've subscribed for more wonderful information from you ❣️

LOL.. canning is addicting! my ma just won't stop canning. she now has 113 of those green jar boxes. my sibling and I help her and she just can and can and loves being in the kitchen. we play dance music and even the dog is enjoying it. Thanks for the video Linda and the tip about the lemon juice. Love your out look for teaching people how to live healthy just by putting in a few hours of what looks like fun. I do have a suggestion for the extra cherries and juice. Pop it into a 5 gallon homebrew jug with some more honey and the find of a lemon (Lots of good mead recipe's on net). Add a teaspoon of brewer's yeast and a balloon over the top of the jug with a pin hole through the end and put it in a dark cool place till Christmas. Carefully syphon off into clean sterilised bottles and share with your husband and family 😀 they'll love it. God bless
great I just about to look up cherries, I hadn't done them before I love your videos and you are right they last more than a year, I still have the first jar of blackberry jam I made with my grandmother when I was only eight I am now 60 don't know if its still good its just its always the first jar that goes in my cabinet when I move she is gone now, one day I will open it make some biscuits and I hop;e its still good, I grow blackberries myself. and make it. have a blessed day
i love when you talked about how long food can last on your shelf i just finished up jars of tomatoes i canned 10 years ago they where just as good as the day i canned then. we do have to much wasted food in this country
Thank you for this video. I used your method of macerating the cherries with honey and finished the cherries this morning. I did use some extra honey and water and some vanilla essence. They turned out beautiful. I wish I could upload a picture but not sure if that can be done on youtube.
Great looking cherries. If you're going to use the cherries with oatmeal then I'd tend to pack several 1/2 pint jars because opening a big jar might be too much to use up quickly.
I use playtex gloves when I can. I can maneuver the jars around much easier. I can feel the heat but don't get burned. I use the tools to get the jars out of the canner after sterilizing them, and if I'm wearing the gloves, I have more control in doing it. Just saying.
My neighbor had an apple tree with pretty apples all over it. They never use them. I've asked my hubby if he will ask if we can have some to can. I told him to tell them that we will share with them. I would love to see some meals made with what you've canned.

I was just wondering. If you let the cherries mascerate overnight but when you can use 'fresh' boiling water so you can have more juice to can would the cherries still be able to mascerate more in the can? I love cherry juice and would love to find a way to maximize fresh juice.
I see how much honey and sugar that was used but not how many cherries. Are they Bing cherries...if not, do we need to adjust the sugar. I'm very new to all this.

Linda, I realize this video was four years ago, but. An you tell me if these are red sour cherries or are they Rainer sweet cherries? They don’ look super red, so that’s why I’m asking. I have Rainer cherries and sour cherries. I get a ton of the sweet Rainer’s and love fresh eating, but would like to preserve for winter eating and or desserts. Thanks for sharing your ideas.

Hi Linda! I saw a neat video on ChefSteps where they make their own mandarin orange gems, without the "skin". They soak the segments in water with a pectin product that eats away the casing and all that's left is the fruit, just like the ones in the cans at the store!
