It must be pie filling day again. I have strawberry peach pie filling in the canner now. Smelled so good while putting it the jars. I bought the same cherry pitter this week so glad to know it works. I've got a couple of pounds of cherries to put up this weekend.

Our Amish store here handles the instant Clearjel like you use in fresh strawberry pie and also the cooking kind for pie fillings and canning. Thanks to you for the knowledge about the difference between cornstarch and Clearjel. Thank you dear heart!!!
I used the cornstarch in my blackberry pie filling and cooked the cornstarch and sugar and water until it was lightly opaque. It seemed to do a great job. :)
Cornstarch won’t break down with heat, though it burns easily. The choice of cornstarch or Cleargel in this recipe is up to your taste, and what’s available to you. Cornstarch is often used in canning to thicken fruit recipes like jams.
I loved, loved, loved this video!! I love how you always use organic local produce! I seem to always forget to debubble. I have learned that if I take our the plastic debubbler and put it into the next jar as I put the funnel on, it is already there as a reminder and I don't seem to overfill either.

Thanks, Linda. Here is what I learned from your video: 1.) Under your recipe If you fold in 8 cups of cherries you will get 7 quarts of pie filling. (This is because my biggest pot can only hold all these ingredients.) Plus 7 quarts will fit the canner perfectly. 2.) Next, when canning the pie filling let the water come to a rolling boil after you put the pie filling in; before starting the timer for 35 minutes. 3.) Let the pie filling cool for 24 hrs THEN REMOVE THE RETAINING RING! Clear jell or corn starch acts like a glue and seal the retaining ring to the jar. My wife forced the jar open because I had left the ring on 2 years ago. She broke the lip of the mason jar and use the filling anyway, not realizing that glass could have and most likely fell into the pie filling. When I found out about it; I tossed the pie out and she got mad at me. One for leaving the ring on and second for tossing the pie she just baked. Later we laughed at each other for being stupid and silly. (You know who was stupid. ) :-)
Linda...Bed Bath and Beyond doesn't pay any attention to the expiration date on their coupons...they will honor them...my sister works part time for them here in MD...so we keep them handy on the shelf and just grab them and/or share with family!

Hi, what happens if you overfill a little and when you wash the jar the next day and some dried on goop has ran down the jar? They have all sealed, are they safe?

I googled my address for altitude and it's less than 1000 feet. How many minutes am I supposed to process the jars in water bath canning. All the charts I have read to adjust says 1001 and up nothing lower I've seen one chart that has 0-1000 but no timing. Oh I love all your videos by the way lol

Hi Linda. I tried my hand at canning Cherry Pie Filling for the first time ever today. Using 3 quarts of Cherries, I ended up with 3 qts and 1 pint of filling. I tried to de-bubble but the filling was so thick that the bubbles didn't rise to the top. I did process for 30 minutes. I see air bubbles in the filling along the sides of the jars. Is this a problem, or is this common in home-canned pie fillings. I would so appreciate if you might answer. Just want to make sure it is safe.
I made this with cherry juice for the 1st time this year. I steam juiced the cherries. It was beautiful and tasted better. I had a bumper crop of cherries this year. Bottled pie filling, marachino cherries, sugar free cherries,cherries in Lexardo and amaretto, black forest preserves,black forest ambrosia conserves and cherry marmalade. I saw a recipie for cherry lemonaid concentrate. This will be made if somebody can tell me if you can use soft cherries. They are getting to the end of their usefulness. I have offered the excess to others for the picking. Nobody wants to pick

I use an inch and quarter to inch and half on my pie fillings as they almost always siphon… cherry is my next to do. Thanks!

thanks, you answered my questiion....they don't say on the package if you add the clear jel to cold or hot liquid. so it's just like corn starch

What type of rack did you put in the bottom of the regular pot so the jars wouldn't be on direct heat?
Is there a difference in the clear gel for this vx the therm flo thickener you use for soups?

I can my own sweet and sour sauce and use corn starch have has no problem with it breaking down

So who got the pits in the 2nd jar? My dad always said if there was a pit in a cherry pie he was the one to get it. He tried to claim it was lucky.

No sure jell is a pectin brand, clear jell is a cornstarch alternative used for canning
