pasquale, hearing you strum pepino reminded me of my grandfather when i was a kid in brooklyn ny. he would make polpetta, brasciolle, aranccine, many dishes and talk of when he was a kid in sicily. lou monte' pepino would be playing in the background as he cooked. that brought back a lot of memories. now i do the same when cooking sometimes as well as listen to jimmy roselli, jerry vale, and tony bennet.
From LI NY...we dug clams the same way. We use hands or feet...my favorite way is to dig up two at the same time, smash them together and eat the one that broke in the water. So fresh, as fresh as it gets. Live the life Cent Anne

Thirty miles north of Naples, Italy in 1900! He cooked alot and I always watched him. I learned alot. Now today at 75, I learned alot from him and watching your show which I love! I am a great cook not like you yet but really good! And being disabled and on oxygen I do pretty good! And especially l ast year at this time I was grieving my daughter who had died suddenly and my husband dying 5 months after her its been a very rough year! But yiur show brings me laughter, learning from an awesome chef and brings me back to when my father was alive! Thank You Piasan❤❤😂😢😅😊
lou monte !! my dad played the concertina . he had a recording of lou monte's "pepino" . i love that song before u tube (and long after my dad had passed) , i inquired to my long time sicilian barber about this tune . of course , he knew it and later presented me a cassette recording of the song . your recipelooks great. thanks for the memory

Just got back from a Friendsgiving dinner at an Italian restaurant, had this as an appetizer, was so good I used the shells to scoop up the sauce. Had Filet Minon for dinner.

I don’t know much about seafood. How do you get the meat out of the clams? I know that is a stupid question. Aren’t the clams sealed shut? Do you steam them first?
I use a clam knife (like this one amzn.to/2S3Tud1) to open the raw clams. Do not steam first or else the clams will be overcooked if putting in the oven for another 15 minutes.
Had to wait for the dance, and was worth it! Wish I grew up in Italy when our parents did - ok, that would be weird but man those memories sound so good and make them so happy. (We have diapers on our face!)
